Gram Flour Pakoras
We call the snack in the fore-front of this photo ''wara' at home but some know them as fluffy pakoras or gram flour fritters. They are made from a thick gram flour batter that has several other ingredients and then deep fried until puffy and golden.

Ingredients
- 1 cup gram flour/besan/chickpea flour
- 2 tsp whole cumin seeds
- 1 tsp salt
- 1 green chilli chopped
- 4 tbsp fresh coriander chopped
- 1 tbsp fresh fenugreek chopped
- 1 small onion diced very finely
- 1 small potato peeled and sliced very thinly
- 1/2 tsp garlic paste
- water as needed
- 1 level tsp ENO salt the one that comes in a blue bottle
- oil for deep frying
Instructions
- Sieve the gram flour, add in the salt, cumin and garlic paste. Stir in some water slowly whilst mixing to avoid lumps. Keep adding until a very thick batter is formed. Add the coriander, chillies, diced onion and potato slices. Stir them in well.Heat oil, and just before you start frying, add the ENO salt into your mixture. You will notice it immediately effervescing and bubbling up. Mix it in quickly and scoop a small ball of the mixture with your fingertips and drop it gently into the oil. You will notice it almost instantly expanding in the hot oil. Fry on medium heat so they don't burn from the outside and they get cooked through to the center. Keep scooping and dropping more of the batter into the oil, then stir and turn them around so that all sides are evenly cooked and coloured.Drain on paper napkins and serve hot with a dip of your choice. Enjoy!

Hi Fauzia, Pardon me if I sound unacquainted but what is ENO? Is it safe to use? and Can I get it in USA? if not then is there any alternate I can use?

Hi and yes it is perfectly safe to use. It is an over-the-counter antacid, has a fizzy effect when added to water. I am pretty sure it should be easily available in most grocery stores or supermarkets. You can use baking soda instead, although ENO gives better results.

Can I use normal salt instead
Can I use normal salt instead of ENO. I don’t have it and we don’t use it in the family, so if I buy it might go a waste.

Hi, ENO salt is sort of like bicarbonate of soda, not the same thing as regular salt. It fizzes in the batter, therefore making the pakoras puff up and become light and fluffy. You can check for the small single use satchets, they should be easily available.
