Custard Cookies

Tiny and delicious bites of the most melt-in-your mouth, crumbly cookies ever!! Easy to make, and they taste outstanding!
Servings 40 cookies

Ingredients
  

  • 2 cups all-purpose/plain flour
  • 1/2 cup custard powder
  • 1/2 cup pure icing sugar
  • 250 gm unsalted butter
  • 1 tsp. vanilla essence

Instructions
 

  • Bring the butter to room temperature. Pre-heat the oven to 180 degrees C.
    If you have a food processor, mix the butter with icing and vanilla. Process for a couple of minutes or until well combined. You can use a hand-mixer.
    Add the flour and custard. Pulse until JUST well combined. Do not over-process coz then your cookies won’t have a fine delicate crumbly texture.
    Shape as desired and bake on greased trays! (12-15minutes)

Notes

I rolled teeny balls with my hands, placed them on the tray and flattened them slightly with a fork. Dip the fork in flour to avoid it sticking to the cookies. If the cookies crumble or crack during shaping, add a few drops of milk and try again.

    1. Hi! I got my partner to translate for me because I do not speak Urdu. No idea how Sooper n Bakery biscuits usually are, but these are the crumbly melt-in-your-mouth kind of cookies.

    1. W/Salaam, no please use icing sugar for this recipe otherwise the results will not be the same.

Assalamu alaikum fauziaji…i am a big fan of u till now which ever recipe i tried of urs was a big hit say, chicken bread, pizza rolls, bread cones and alll…in am at present making ur nutty fruity biscuits….     I would like to ask..will it be ok if i use finely grinded sugar instead of the icing sugar?

    1. W/Salaam, icing sugar has cornflour in it which gives the cookies a melt-in-mouth texture. Grinded sugar will not have the extra ingredient. You can add 2 tbsp of cornflour in every cup of sugar then grind together and use.

    250g of sugar is well over a cup. don’t u think it is bit to much? i tried them last year. they smelled fantastic but they got melted while baking as the batter was kind of floating in butter. not sure, what went wrong with me. could u please assist?

    1. Hi, this is ICING SUGAR not normal sugar. So 250gm is just right. Did you use normal sugar? Coz no way they would have melted if you used icing sugar.

    1. W/Salaam, yes that is fine, just try to avoid over-handling the mixture…be very quick when mixing. 🙂

    1. You can but it may make your
      You can but it may make your cookie dough drier. The amount should be perfect actually. You can then dip the cookies in chocolate and let them set if you prefer to have them sweeter.

      W/Salaam, salted butter is fine, I use it sometimes when I run out of unsalted and it gives great results. 🙂

      W/Salaam, yes that is fine. Just lightly butter the tray to avoid the cookies sticking to the tray.

    Salam fauzia, I would like to try your custard biscuits they look very yummy but just wanted to confirm that I have got measuring cups and in that 1 cup is 250gms and half cup is 125gm. So can I use my measuring cups for this recipe or use your measurements in which one cup flour is 120gms. I want to try this recipe tomorrow so please reply as soon as possible.

    1. W/Salaam. Just to clarify for
      W/Salaam. Just to clarify for you, the cups may SAY 250gm, but really it depends on the ingredient being measured. Not all ingredients weigh the same. For example if you take 2 exact same bags, fill one with rocks and another with feathers, obviously one will weigh more than the other even though the SIZE of the bag is the same. Get me? So 1 cup of flour is ALWAYS 120gm. and 1 cup of sugar will always be 200gm. Same cup, different ingredients so different weights. Best to go by a scale to confirm how much your cup can hold of each ingredient.

      W/Salaam, am a bit worried about the addition of an egg, normally the amount of butter used in the recipe should be more than enough. Did you measure out the flour and other ingredients accurately?

      Am worried that the addition of butter will throw the balance off and the cookies may end up being too greasy. Am really surprised as this is a recipe that has been tried by very many people and it seems to have worked out ok with the ratio of ingredients given. You can try and add a little bit of beaten egg, it probably would be a safer bet than adding more butter.

    Will u plz name some brands of unsalted butter coz here in Malawi mostly products come from Kenya

    1. W/Salaam, I use the kenyan
      W/Salaam, I use the kenyan KCC butter or Brookside butter. You can use either salted or unsalted, either one will be fine for this recipe.

  30. Salaams! Wanted to know if I can use margarine instead of butter? If yes, should the quantity be the same?

    1. W/Salaam, margarine will not give the exact same results in texture and flavour but yes you can. And yes the quantity should be maintained same.
