Creamy Chicken Filling

This is the filling I use for my Chicken Bread recipe and sometimes for my Chicken Pies. It’s absolutely delish!

Ingredients
  

  • 1½ - 2 cups chicken boiled and shredded
  • 1 medium or 2 small onions chopped finely
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 2 tbsp. coriander leaves
  • 4 chopped green chillies
  • 1 tsp. garam masala powder
  • 2 tbsp. flour
  • 2 tbsp. butter
  • 1 cup milk

Instructions
 

  • Heat 2 tbsp. butter fry onion till soft then add 2 tbsp. flour with 1 tsp. salt, 1 tsp. black pepper, 1 tsp. garam masala….add the milk, cook till thick, mix in the shredded chicken add chopped green chillies and coriander leaves, remove and cool completely.

  1. How many is 1½ – 2 cups chicken in grams???and how many onions do i use for 1 kg boneless chicken??can u plz tell me the rest of the measures for One kg of chicken???

    Do you boil chicken with ginger garlic paste or any other ingredient while boiling?

    1. W/Salaam, yes I prefer boiling the chicken with ginger, garlic paste, a bit of black pepper and salt.

    1. W/Salaam, thank you. Yes that would make a drier filling but go with your taste. 🙂

    1. Simply boil the chicken on low heat with some water, ginger, garlic paste, a bit of black pepper and salt for about 15minutes. Once cooled, shred with a spoon.

  6. Salaams, what is the milk you have mentioned, is it coconut milk? and is this recipe a spicy one? pls advise. Thanks

    1. W/Salaam, whenever it says milk, please take it to mean REGULAR fresh milk. If it is coconut milk I normally indicate it in the recipe. And yes the filling is spicy, but the chillis can be reduced or adjusted to taste.

    1. W/Salaam, garam masala is All-spice powder. Coriander leaves are fresh dhania leaves.

    i just want to knw to substitute milk , u’ve told that we can use chicken stock. my question is do we have to add chicken stock as it is while preparation the sauce or we have to liquify the stock cubes? thank you

    1. Definitely liquify the stock cubes dear as you need the liquid to make the saucy chicken filling.

    1. W/Salaam, you can make a second batch of the mixture (even half of the amounts) but this time without chilli and mix it in.

    Just wanted to ask instead of coriander leaves can i use coriander powder??(powder is available in supermarkets) bcoz i dont know wat coriander leaves are …

    1. No you will need the coriander herb (leaves and stalks), it is a leafy herb you can google to see how it looks and it is available in most markets.

  20. W/Salaam yes you can but since it is a wet mixture, it might make the samosas not be as crispy as you would like.

  21. Salaam….I am curious to know how many servings this will make? I plan to make this for a party and thinking of using puff pastry phillo dough(is the mixture too soggy for puff pastry and baking? Or you think it will work?) my question is..how many servings will 500gm shredded chicken produce?

    1. W/Salaam, depends on the size of pastries you plan on making. I would guess up to 20 pieces of medium sized ones, or more if you make them bite-sized.

  23. The puff pastries were also great! This was an awesome appetizer…only next time, I would consider making my own dough since the puff pastry sheet was pricey at 10 pastries per sheet.

      W/Salaam, without the milk it would no longer be a creamy chicken filling. I guess you could use chicken stock but results will definitely not be the same.

    1. Boil and shred the chicken
      Boil and shred the chicken first, then you will need the above ingredients for every 2 cups of the shredded chicken. Measure out how much chicken you have in cups and then multiply accordingly.

    This is the type of recipe I have been looking for, to make a nice sandwich filling.
    Couple of things though:
    1. I don’t like onions or the Green Chilies but want to make this a mild heat, I have paprika and cayenne pepper powders, can these be used instead, I know there is spices with the Garam Masala powder too (will buy other spices too if needed). What quantities will I need?
    Will this go nicely with Cheddar cheese?

      Hi, yes you can skip the green chillies and use a dash of paprika or cayenne pepper (to your taste). And yes this does go really well with cheddar cheese.

    Fauzia, first of all thank you very much for sharing this wonderful recipe. I made the roses yesterday using this filling and they were a hit. Even my 11 year old son who is a picky eater, said they were amazing which believe me is really something!!! The only problem I had was the sides opened up even though I pinched them together as you said. Is there anything else I can do to ensure this does not happen the next time I make them? Lastly, if I make the filling advance, how long can I keep it refrigerated? Thanks again

    1. Thanks for the amazing
      Thanks for the amazing feedback. The filling can be made up to 3-4 weeks in advance and frozen, or if you plan to just refrigerate it then no longer than 3-4 days. Make sure the dough is really really soft to avoid it opening up, when it is soft the dough sticks together when pinched. You can help it along by dipping your fingertips in water and pinching the dough together to help it stick.
