Singaporean Rice
One of my favorite pasta dishes, the combination of flavors in this meal is truly exceptional. This dish is made up of layers of rice, spaghetti, chicken cooked with veggies, mayonnaise sauce and topped off with garlic and green chilies fried in butter. I have tweaked a multitude of recipes until I finally came up with something that is to my liking. Not only does the dish appeal to the eyes, the aroma that wafts from the dish once its prepared is irresistible.

Ingredients
Ingredients for Mayonnaise Sauce
- 1/2 cup mayonnaise of your choice
- 3-4 tbsp ketchup
- pinch of salt
- tiny touch of garlic paste for flavor
- 2 tsp. red chilli powder
Ingredients for Chicken and Veggies Gravy
- 1/2 kg boneless chicken preferably breast cut into cubes
- capsicum chopped very finely I used 1 red and 1 green for the color combination
- 1 carrot cubed finely
- 1 onion chopped very fine
- 1/2 tsp. ginger/garlic paste
- 2 green chillies chopped if you don't want the dish too spicy you can omit this
- juice of half a lemon
- splash of soya sauce
- 2 tsp. black pepper
- 1/2 tsp. cumin powder optional
- 2 tbsp. chopped coriander
- 1 tsp. red chilli flakes or chilli powder
- 1 tbsp. ketchup
- 1 tbsp. corn flour mixed in 1/2 cup water
- 3 tbsp. oil
- salt to taste
Ingredients
- 200 gm Spaghetti or Noodles
- 1 cup rice
- 3-4 cloves garlic
- 2-3 green chillies
- 1 tbsp. butter
- oil as needed
Instructions
- Prepare the RiceYou will need 1 cup of rice, bring a pot of water to boil, add salt and 1 tbsp. oil into it. Add rice that has been pre-soaked for 20mins. Boil until rice is almost done, drain the water and put the rice back into the pot. Cover and put to steam (on dum) for 15 minutes.Prepare the SpaghettiYou will need 200gm spaghetti pasta. Boil as per package instructions, adding some salt and oil into the boiling water. Drain, then drizzle 1 tbsp. of oil on the pasta to prevent it from clumping together. Put in a hotpot and set aside. For the Mayonnaise sauceMix all ingredients together and adjust taste. Set aside.For the Chicken and Veggies GravyHeat the oil in a pan, add the onions and fry until they are translucent. Add the chicken, ginger and garlic paste. Fry for a few minutes until the chicken color changes. Then add the capsicum and carrots. Stir fry until the chicken is about done (should take about 8-10 minutes). Add the green chillies, chopped coriander, soya sauce, ketchup and lemon juice, plus chilli flakes, salt and pepper. Cook together for 2 minutes, then add the corn flour mixed in water. Lower the heat and let the gravy simmer for a few more minutes. You can add some extra water if you want extra gravy or if you find it too dry. Adjust taste and turn off the heat.In a small pan, prepare the garlic and chilli topping. Take 3-4 cloves of garlic and chop them up into tiny bits. Then chop 2-3 green chillies. Add 1 tbsp. butter to the pan and let it melt, then add the garlic and chili. On low heat, fry these together for a few minutes until the aroma is great and the garlic is fried.For the layeringTake a dish, pour the rice to cover the bottom. Then follow it with the spaghetti to cover the rice. Then pour the chicken gravy over the spaghetti. Drizzle the mayonnaise sauce all around the edges and some in the center. Finally sprinkle the buttery garlic and chilli all over and serve!The dish can be reheated easily in the microwave, or you can prepare all the layers in advance and then give them a quick heating and pile them up just before serving.Enjoy!

Is it me or is the combination of spaghetti and rice totally normal?
Trust me you will change your mind after eating it! The combination does sound odd but its so delicious and completely blends you have to try to believe it,esp. with the mayonnaise sauce its perfect.

i even added on the top at last some fried bite sized spaghetti, i fried them in a non stick pan with very little oil. and added them on top…those crispy bites felt yummy!

U can boil rice and spaghetti the night before along with the mayonnaise sauce and refrigerate.next day you can make the chicken gravy and fry the spaghettis in some butter(they will be fresh and tasty)when using them. This way you can manage.its worth the effort.

Best results is with chicken, have never tried this with beef or mutton.

I want to try this recipe this weekend. But what do you mean by steam on dum?
It mean cover the pan with a tight lid and put it on very low heat so the food inside gets a chance to gently steam until done.

W/Salaam, the mayo sauce is just an extra sauce normally served on top to make sure the meal isn’t too dry and it lifts the flavours. If he is allergic you can leave it out but drizzle some ketchup or make the chicken mixture a bit more saucy.

Yes you can. Home made is always healthier but be careful that it does not last longer than a week at most. And should be refrigerated at all times as it is made with raw eggs and that can pose health risks if it goes bad.
