Spicy Roasted Broccoli

Servings : Serves 4-6

This has got to be my ABSOLUTE favourite way of serving broccoli. I actually enjoy snacking on a bowl of these with some raita to dip into, they are THAT good! Plus, it does help that they are just so very easy to prepare.

Ingredients

  • 1 head of broccoli, cut into florets
  • 2-4 tbsp oil
  • salt and black pepper to taste
  • 1-2 cloves garlic, finely minced or crushed to a paste
  • 1 tsp chilli flakes
  • juice of half a lemon

Instructions

Mix the oil, salt, black pepper, garlic, chilli flakes and lemon juice in a bowl. Pour over the broccoli florets and gently toss together. Spread over a foil-lined baking tray and bake in a preheated oven at 200 C for about 10 minutes, turn them over and bake for another 5-8 minutes or until the florets are beginning to colour around the edges and are crispy.

Remove and serve as a side or on their own with a dip of your choice.
