Okra/Bhindi & Potato Fry

This is about the only veggie dish my hubby would willingly have. He’s super fussy with his veggies, but he has this and asks for seconds!

Ingredients

  • 250 gm fresh young okra/bhindi
  • 1 onion, chopped finely
  • 3-4 potatoes, peeled and cubed
  • 1/2 tsp garlic paste
  • 1/4 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 green chilli, chopped
  • 2 tbsp chopped fresh coriander
  • 1/2 tsp black pepper
  • salt to taste

Instructions

Wash and dry the okra, then chop into pieces and set aside. Heat oil in a frying pan and deep fry first the bhindi/okra until crisp and starting to brown around the edges. Remove and drain on tissues. Then deep fry the potato cubes and remove on tissues too.

In a different pan, put a bit of oil, followed by the garlic and the onions. Fry the onions until they are golden…make sure you keep stirring them so that they brown evenly. Add the fried okra and potato cubes and sprinkle all the spices and salt followed by the green chilli and coriander. Toss together for a minute and turn off the heat.

Serve with Rotis.
