Servings : Makes 2 cups
This is one of those healthy yet delicious home-made snacks that is very easy to prepare.
- 2 cups boiled chickpeas (or 1 can, drained)
- 1 tbsp. olive or vegetable oil
- 1/2 tsp. salt
- 1/4 tsp. cumin powder
- 1/2 tsp. chilli powder or cayenne pepper (or to taste)
- 1/2 tsp. paprika powder
- 1/4 tsp. garlic powder or paste
- pinch of turmeric
- a few drops of lemon/lime juice
Begin by rolling your chickpeas between two clean dishtowels or paper towels. Your goal is to get as much of the moisture off the chickpeas as possible. Combine all of the ingredients in a bowl and carefully stir or toss, ensuring that each chickpea is evenly coated with spices.
Arrange the chickpeas on a baking pan in a single layer. Bake in a preheated oven at 180 C for 30-40 minutes, shaking the pan every 10 minutes. The end result will be perfectly crispy and golden brown chickpeas. The chickpeas normally soften after a day but the taste remains great. If you like them crunchy, best to have them right out of the oven.
