Khari Pooris

Farsi Khari pooris or puris, one of my favourite crispy savoury/salty snack. They are a flavourful and spicier version of the more famous namak paray.

Ingredients

  • 1 1/2 cups all purpose flour
  • 2 tbsp oil
  • 1 tbsp margarine
  • 1 tsp salt
  • 1 tsp cumin seeds (sometimes I mix some roughly ground cumin seeds with the whole ones)
  • 1 tsp ajwain/carom seeds
  • 2-4 tbsp sesame seeds
  • 1 tsp black pepper, roughly crushed
  • 1 tsp chilli powder
  • 1/4 tsp turmeric powder

Instructions

Mix all the dry ingredients then add the oil and margarine and rub them in until you have the consistency of breadcrumbs. Then gradually add water and knead into a firm but smooth dough, not as soft as the dough for making buns. Cover and let it rest for 15 minutes. Then divide in half and roll each half out. Prick the dough all over with a fork or make tiny cuts using the tip of a knife to prevent them from swelling when frying. Cut into whatever shapes you want, rounds or diamonds. Fry on medium heat until golden brown and crispy. Once cooled, store them in an airtight container.
