Egg Chops

Servings : Serves 2-4

These are basically boiled eggs surrounded by spiced mashed potatoes, coated in beaten egg and breadcrumbs and then deep fried until golden. When I was little, there was a restaurant close to my home that sold these and I remember saving up some of my pocket money to go buy myself this yummy snack a couple of times a week. They are usually served with a bit of ketchup or hot sauce, and are a great idea for lunch boxes especially for kids.

Ingredients

  • 4 eggs, hard-boiled and peeled
  • 4-5 medium potatoes, boiled and peeled
  • 1 tbsp lemon juice
  • 1/2 tsp red chilli powder (optional for some heat)
  • 1/4 tsp black pepper powder
  • salt to taste
  • 1 egg, lightly beaten (season with a pinch of salt and pepper)
  • 1 cup breadcrumbs (you can season these with some dried herbs if you like)

Instructions

Mash the boiled potatoes with the lemon juice, red chilli powder, pepper and salt.

For a more flavourful mashed potato, you could sauté some onions, garlic, chopped chillies and finely chopped fresh herbs like coriander or parsley until softened then add them to the mash.

Scoop a handful of the mashed potato and cover a boiled egg with it, make sure it is properly covered and smooth. Repeat with the remaining boiled eggs. You can refrigerate these for about 20 minutes to help firm them up.

Dip each one in the beaten egg, and then roll them in the breadcrumbs. Heat oil on medium and deep fry until golden and crispy. Remove on to paper towels to drain off any excess oil.

Serve with a dip of your choice.
