Foil Packet Fish

Here’s a healthy yet incredibly flavourful way of preparing any fish fillet. A piece of aluminum foil is folded to form an airtight packet in which fish that has been seasoned is sealed in and then baked in the oven to reveal a moist, aromatic and perfectly cooked result.

Ingredients

  • 1 portion of fish fillet of your choice
  • 1 small capsicum, sliced
  • 1 small onion, sliced
  • 1 tsp oil
  • juice of half a lime or lemon
  • 1/4 tsp paprika powder
  • 1/4 tsp red chilli powder or flakes
  • 1/4 tsp garlic paste
  • salt and pepper to taste

Instructions

Rinse the fish fillet and pat dry.

Make a paste using the paprika, chilli powder, oil, garlic, salt and lemon juice. Rub this on the fish fillet and set aside for 20 minutes.

Preheat the oven to 200 C.

Take a large piece of aluminum foil. In the centre, arrange a few slices of onion and capsicum slices. Place the fish on them and arrange a few more slices on top of the fillet. Sprinkle a bit of black pepper.

Carefully seal all the edges to form an enclosed packet. Place the packet on a baking sheet and bake in a preheated oven for about 15-20 minutes, depending on the size of the fish. Fish is done when it flakes easily with a fork.

Serve over rice or alongside roasted veggies of your choice.
