I love this simple salad which goes really well with most dishes, especially pilaus. It’s also really easy to make.
- 2 onions
- 2 tomatoes
- 2 green chillies
- juice of 1 lemon
Slice onions thinly, then sprinkle them with salt and let them stand for a few minutes. Then rinse well to remove all the salt and drain. This helps reduce the strong onion smell and softens the onions slightly
Slice the tomatoes.
Mix the two together, season with lime juice or vinegar and add some chopped chilli and coriander if you like.
