Servings : Makes 1 cup
This lovely dip can be prepared hours ahead of time, or even from the day before. It goes beautifully with any fish recipe, especially fried fish or as the sauce in fish burgers.
- 1/2 cup mayonnaise
- 1/2 of a cucumber grated and moisture squeezed out
- 1 tbsp. finely minced onion
- 1 tbsp. lemon juice
- chopped fresh dill, parsley or coriander
- salt & pepper to taste
In a small bowl, mix together mayonnaise, cucumber and minced onion. Stir in lemon juice. Season to taste with salt and pepper, then mix in the chopped herbs.
Refrigerate for at least 1 hour before serving.
