Guacamole

Servings : Makes 2 cups

Guacamole is an avocado-based dip that combines ripe avocadoes with lime and chillies to make for a healthy, fresh tasting accompaniments to nachos or tortilla chips.

Ingredients

  • 2 avocados, halved, de-seeded and peeled
  • juice of 1/2 a lime
  • zest of 1/2 a lime
  • 1/2 tsp. salt, or to taste
  • 1 small onion, finely diced
  • 1-2 jalapenos or green chillies, finely chopped
  • 1 tomato, finely diced
  • 2 tbsp. chopped cilantro
  • 1/4 tsp. garlic paste or 1 small garlic clove, minced

Instructions

Mash the avocado with a fork or the bottom of a clean cup.  It should not be a very smooth paste, leave some chunks in there. Add salt, diced tomatoes and onions, lime juice and zest, chilli powder, garlic and chopped jalapenos.  Fold everything together, then taste and adjust if seasoning is needed.

Guacamole does not keep long in the fridge, it tends to change colour.  Best to make and serve it on the same day, but if you have leftovers, press some cling film over the surface of it when storing and it might keep for about 24 hours.

Serve with chips or nachos.
