Spicy Southern Fried Chicken (with a twist!)

Isn't chicken awesome? So many ways to cook it! Well here is my version of crispy fried chicken that will absolutely leave you wanting MORE! On the PLUS side, it is sooo easy to prepare…an absolute no fail recipe.

Ingredients

  • 1 chicken, cut into 8-10 pieces (I prefer without skin) - marinate chicken with ingredients below for at least an hour in the fridge or even overnight.
  • 2 tbsp. yoghurt
  • 1 tbsp. tomato paste
  • 2 tsp. red chilli powder
  • juice of 1 lemon
  • 1/2 tbsp. coriander powder
  • 2 tsp. salt
  • 1/2 tsp. garlic paste
  • 1/2 tsp. ginger paste

Instructions

Now put the chicken with its little marinade into a pressure cooker. Don't add any water, close the pressure cooker and cook for 1 whistle ONLY. This will help tenderize the chicken perfectly without over-cooking it.

Now remove the chicken from the pressure cooker and let it cool off completely. If some 'gravy' came out of the chicken in the pressure cooker, you can pour it over the chicken and let it cool. This little gravy helps infuse extra flavor into the chicken.

Once completely cool, beat an egg with 1 tbsp. milk and a bit of black pepper. Dip the chicken pieces one at a time into the egg mixture, then coat with either corn flour OR breadcrumbs (I prefer crumbs). Fry the chicken pieces on medium heat until golden and crispy.

Drain excess oil on kitchen tissues. Serve with a dip of your choice and fries!
