This tender and flavourful skewered grilled meat is a popular Greek fast food and is usually served with pita bread, some tomato and onion garnishes, tzatziki sauce and a side of fried potatoes. Souvlaki can be made with any tender cuts of meat, I have opted to use chicken in this case but even lamb or beef fillet will work just as well.
Ingredients
- 500 gm boneless chicken breast and thighs, cut into cubes
- 2 tbsp lemon juice, freshly squeezed
- 2 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp red chilli flakes (optional, for some extra heat)
- 2 garlic cloves, finely minced
- 4 tbsp olive oil
Instructions
Clean and pat dry the chicken cubes. Mix the oil, lemon juice, salt, garlic and oregano together in a bowl, then add the chicken cubes and combine until every piece is well coated. Cover and refrigerate to marinate for at least 2 hours or up to overnight.
Soak some wooden skewers in water for about 20-30 minutes to prevent them from burning during grilling. Remove the marinated chicken from the fridge at least half an hour before you begin cooking to ensure it comes to room temperature. Thread the chicken cubes on the soaked skewers. Grill the skewered chicken on a BBQ stove or in a grill pan, turning them occasionally until the meat is cooked through (approximately 8-10 minutes total). Serve with pita bread, tzatziki sauce, chopped tomatoes, sliced onions and fried potatoes.
