Chicken in Green Masala

A nice change from the usual red curries, perfect with parathas or rice.
Servings 5 people

Ingredients
  

Ingredients for Green Mixture/Marinade

  • 1 cup chopped fresh coriander with stems
  • 1 tbsp. garlic paste
  • 1 tbsp. mint leaves
  • 1 tbsp cream fresh or coconut
  • 2-4 green chillies to taste, I use about 4
  • juice of 1 lemon
  • 1/2 cup yoghurt

Additional Ingredients

  • 1 chicken cut into 8-10 pieces
  • 1 tsp. ginger paste
  • 1 tsp. garlic paste
  • 2-3 cardamom pods
  • 1 tsp. cumin seeds
  • 1 tsp. cumin powder
  • 1 tsp. coriander powder
  • 2 onions chopped
  • 1 green chilli slit
  • 1 tsp. ground black pepper
  • 1/4 cup coconut cream or fresh cream
  • 1/4 cup oil

Instructions
 

  • First, blend the coriander leaves, garlic paste, mint leaves, cream, green chillies and juice of 1 lemon to a smooth paste. Try to do this without adding any water. Once done, add the half cup of yoghurt and mix well, then add the chicken pieces and allow to marinate for about half an hour.
    Next, heat the oil, add the cumin seeds and the cardamom pods, when they splutter, add the onions and fry until golden brown. Then add the ginger and garlic pastes, fry for a few seconds and add the chicken without the marinade. Cook on high heat for 5 minutes, then lower the heat, add the marinade, 1 tsp. salt and the coriander and cumin powders.
    Cover and cook for about 10-15 minutes on low, then add the green chili and adjust water if needed. Once the chicken is about done, add in the cream and adjust salt and sprinkle the pepper. Simmer together on low heat for about 3 minutes, then turn off the heat. 
    Serve hot and Enjoy!

  2. I have 1 query. In green chicken you said “add the chicken without the marinade.” It means I will marinate chicken with green paste but while preparing I will add the chicken in oil without marinated paste? Please clarify…

  4. please clarify add the chicken WITHOUT THE MARINADE. Cook on high heat for 5 minutes, then lower the heat, ADD THE MARINADE, 1 tsp. salt and the coriander and cumin powders.
    WHEN TO MARINADE?????????????

    1. Please read through the recipe one more time, you seem to have missed a section where it says to MARINATE THE CHICKEN in the mixture made.

    1. Hi, as you can probably make out from the pic, it is chicken WITH BONES. 1 chicken means ONE WHOLE CHICKEN that is then cut up into pieces. An average-sized chicken would be between 1kg-1.5kg.

    1. The top part of the recipe is the marination ingredients and method. Please read through it once more.

  8. It should be fine, depends on your personal taste. Add a tiny bit and see how the taste is, then you can add more if you like it.

      Hi. Marinade is the mixture which coats the chicken during marination. First put the chicken ALONE into the oil so that it can get fried. THEN add the marinade.

    Salam. My meal did not end up with even a hint of green. It was white because of yogurt and cream. What could I have done wrong? I followed recipe exactly as written. Any help would be appreciated.

      W/Salaam, that is strange. How much fresh coriander did you use? Because a whole cup of it should give more than a little hint of green at least. Did you use more cream/yoghurt by accident maybe?

      Am so sorry Janat! I just re-checked my recipe and noticed that a crucial ingredient (1 cup of chopped coriander) was missing. We are revamping the layout of the recipes, adding servings and so on and this ingredient must have slipped through during the editing. Again, am really sorry and hope at least the taste was alright inspite of it being a white chicken recipe instead of a green one? Hope you get to try it once more now that we have fixed the ingredients list, and thanks for your comment which helped bring this to our attention! 🙂

  24. Your post about the marinade
    Your post about the marinade is a bit tricky or I guess the way you worded it. In the ingredient section you have written “marinate the chicken in the ingredients below with a half cup of yoghurt for about half an hour” and then in the instructions you have written “add the chicken without the marinade”

    So you want us to marinade the chicken first. When it has marinaded you want us to take the chicken out from the marinade and cook it a bit.Then after 5 mins add the marinade. Am I right? Is this what we are suppose to do?

    1. Any light cooking cream, like
      Any light cooking cream, like fresh cream or single cream. Or you can even dilute some whipping cream with milk to lighten it and then use.

    Hi….fouzia…..my.masala dint turn out green,but it tasted awesome!!!! I followed the exact recipe….I dunno Wer I went wrong…..but later on when I checked ur measurement notes,i came to know that you used 200ml as a cup….and i used 240 ml….will that cause a difference…

      Hi, I think the colour depends on how long the mixture is cooked. The longer it is cooked the darker it gets. But as long as the taste was good that is the main thing that matters. 🙂

    1. Yes exactly what you wrote.
      Yes exactly what you wrote. First just the chicken removed from the marinade, and then add the marinade paste.

    Hello im just wondering something.. So i followed the recipe exactly but my chicken wasnt green and the texture was different too, it tasted really good though so im not too worried but I think the part where it says to marinade with all the ingredients, did you forget to add we have to blend them first to make a paste? If not, then i really cant think why it didnt turn out green

      Hi, yes the green mixture needs to be blended. I have edited it into the recipe, sorry about that. I believe it was there before but am not sure what must have happened, bit of the recipe went missing.

    1. You need it for tenderising
      You need it for tenderising the chicken and adding texture and volume to the gravy. The results may not be exactly the same without it. You can use sour cream if you do not have yoghurt.

    Hello dear Fauzia-I had a question. First step of instructions say to marinate chicken for 1/2 hour. Is there any reason I shouldn’t/couldn’t marinate for longer (say even overnight)? Thanks!

    Thank you! I love to be able to marinate overnight, also because it gives me a head start on the recipe leaving more time the next day to prepare more goodies:) This chicken turned out awesome, the gravy so creamy and such an amazing color of green. Can’t wait to make again soon!
