Chicken Doner Kebabs

Servings : Makes 4-6 wraps

Doner Kebab is a very well known Turkish fast food which has some similarities to the Middle Eastern Shawarma and the Greek Gyros. It consists of succulent marinated chicken thighs that are grilled to perfection and then served up wrapped in soft pita bread along with a light salad and creamy sauce.

Ingredients

  • 500gm boneless chickem thighs, cut into big chunks
  • 1 small onion, grated
  • 2 tbsp thick yoghurt
  • 1 tsp chilli sauce or any hot sauce of your choice
  • 1 tsp garlic paste
  • 2 tbsp veg/olive oil
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp sumac (optional)
  • 1/2 tsp red chilli powder
  • 1/2 tsp dried oregano
  • 1/2 tsp paprika powder
  • 1/2 tsp cumin powder
  • 1/4 tsp cinnamon powder
  • 1/4 tsp black pepper powder
  • 1-2 capsicum/bell peppers, cut into chunks (any colour that you prefer)

Instructions

Marinate the chicken in all the listed ingredients and refrigerate for at least 2 hours but preferably overnight for best flavour.

When ready to grill, make sure to remove the chicken from the fridge at least 30 minutes before you begin so as to allow the chicken to come to room temperature.

Thread the chicken and bell pepper chunks onto skewers. Grill for a total of 25-30 minutes making sure to turn the skewers regularly so that the chicken can cook evenly all around and all the way through.

Alternatively you can bake them on a tray in a preheated oven at 200 C for a total of 25 minutes (flip them over once in the middle of baking), and then broil them directly under the oven grill for the last 5 minutes to achieve the crispy little charred bits.

Remove from the skewers and chop into very fine slices. Serve as a wrap in Pita Bread with a bit of salad and some garlic sauce or mayonnaise. Alternatively you can serve the chicken with some rice if you prefer.
