Servings : Serves 3-4
Perfectly tender, spicy and juicy, these world-famous and delicious wings are one of my firm favourites! I prefer oven-frying these (which basically means I bake them on a greased tray and lightly spray or brush oil over them) as opposed to the more common regular frying, so they are relatively healthier without any compromise on the amazing taste!!
Ingredients for Marinade
- 500gm chicken wings, cleaned and divided into flats and drummettes - marinate the wings for at least 2 hours in the ingredients below
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. chilli powder
- 1 tbsp. tomato sauce/ketchup
- 1 tbsp. oil
Ingredients for Buffalo Sauce
- 4 tbsp. butter or oil
- 1 tbsp. honey or brown sugar
- 1/4 cup ketchup
- 1/4 cup water
- 2-3 tbsp. hot sauce/chilli sauce
- 1/2 tsp. cayenne pepper or chilli powder for extra hot wings
- 1/2 tsp. garlic paste
- 1 tbsp. vinegar
- salt to taste
Instructions
Prepare the Buffalo Sauce while chicken is baking
For the Chicken Wings
When ready to cook, preheat your oven at 180 C.
Take a big plastic bag, add half a cup of all purpose/plain flour into it. Drop the wings into the bag in 2-3 batches, and shake until the flour coats all the wings perfectly.
Remove the wings and place them on a greased tray. Lightly spray the wings with some oil. You can also use a brush and brush the wings lightly with oil.
Bake for about 25 minutes. Remove and turn the wings. Put them back in the oven and bake for another 25 minutes.
For the Buffalo Sauce
Heat the oil or butter. Add garlic and stir fry until fragrant. Add all the other ingredients and simmer until thick and saucy. Adjust to your taste and consistency.
Once the wings are ready, toss them in this sauce and then spread them out on the tray for a few minutes to absorb the flavor and cool slightly.
Serve and Enjoy!! 🙂

W/Salaam, yes you can use drumsticks and yes you can remove the skin. Just make sure you bake them about 5-10 minutes longer because they are thicker than wings and will need a bit more time to cook through. 🙂

Wanted to ask is the coating in flour necessary or can I just marinate and cook? Both times i’ve made it, after cooking the chicken in the oven the coating goes lumpy and soggy in the sauce. Jazakallah
W/Salaam. Did you bake the
W/Salaam. Did you bake the wings long enough before baking? Normally it gives a good crisp coating on which the sauce sticks, have never had any issue of it getting soggy or lumpy. Yes you can try without the flour coating if you like. 🙂
I tried frying these and it
I tried frying these and it was so gud.. I want to try it using chicken breast. Can i boil the chicken in water and then marinate? Will the flavours infuse into the boiled chicken?
Do not boil chicken before
Do not boil chicken before marinating, it would be then pointless to marinate as the purpose of that is to tenderise the meat and infuse flavour into it. Boiling first will just make it bland.
In the sauce can i replace
In the sauce can i replace the hot sauce/chilli sauce with barbeque sauce?
Yes you can.
Yes you can.

W/Salaam, could it be that
W/Salaam, could it be that the sauce was very thin in consistency? Also always make sure the chicken wings are dry when you coat them before frying or baking as this ensures that the coating adheres well to them.
Aww. Tried almost everything
