Super-Moist Banana-Nut Muffins

These muffins are the ideal snack, perfect for any time of the day! Super easy to prepare, you cannot possibly go wrong with them. Got the recipe from an online site.
Servings 12 Muffins

Ingredients
  

Wet Ingredients (2 cups total)

  • 2-3 ripe bananas
  • 1 egg
  • 1/3 cup MELTED butter or magarine
  • 2 tsp. vanilla
  • 2 tbsp coffee or water
  • yoghurt OR buttermilk OR milk enough to make 2 cups TOTAL of wet ingredients if you use 3 bananas you may only need a few tablespoons; if you use small bananas, you may need to add 2/3s cup or more, just add enough to make the total wet ingredients 2 cups!

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1 cup chopped nuts I mix hazelnuts, almonds and walnuts

Instructions
 

  • The ingredients are divided into "wet" and "dry", you will need one small bowl and one bigger bowl, the wet goes into one bowl, the dry into the other bowl.
    Preheat the oven to 180 C and grease your muffin pan or use muffin liners.
    Put all of your wet ingredients into the small bowl, making sure you mash your bananas properly with a fork first.
    Put all of your dry ingredients into the bigger bowl and stir them together. 
    Gradually, add the wet ingredients into the dry ones whilst mixing gently. Be sure not to overmix! Even if it looks like some places have a bit of dry flour spots, thats OK. 
    Spoon the lumpy batter into the muffin cups to about three-quarters of the way. Sprinkle the sugar on top. Bake for about 20-25 minutes or until a toothpick comes out clean. Be sure to let them cool for a few minutes before turning them out of the pan. Leftovers can be warmed up in the microwave.

    U said to add coffee in the wet ingredients. so I gather its liquid coffee. can i dissolve some instant coffee in hot water to add to this recipe?

    1. Yes liquid coffee, and yes you can dissolve some instant coffee in hot water. Since you need just 2 tbsp, you can make a cup of coffee, set aside 2 tbsp for the recipe and drink up the rest. 🙂

    1. I have never tried with any other fruit. Let me know if you do experiment and how they turn out for you.

  2. Salaams Fauzia, Is it ok if we leave out the nuts? If so, then do we have to modify any of the ingredients in the recipe?

  3. W/Salaam, you can omit the nuts and can replace them with chocolate chips or just leave them without the nuts. Or try my banana bread recipe, make that into muffins. 🙂

  5. I tried these muffins , they
    I tried these muffins , they r soft but the paper liners doesnt get off, cake sticks to it. i baked them for 20 mins and the skewer comes out clean.

      Thanks for the lovely feedback. That depends on the liners you have, normally good greaseproof liners should peel off easily. Try a different type of liner and see if it helps. Otherwise you can bake them without the liners, just grease the muffin pan well and flour it before adding the batter.

    first of all a big thanks to you for sharing such yummy recipes. I am a big fan of yours. Have tried lots of dishes from ur site. Have a question. Want to make these muffins for my friends whom i wil be meeting after 20 yrs. The problem is i am travelling on 6th aug and would reach my destination on 7th morning. And i would meet my friends on 8th early morning. If i make this muffins on 5th evng and wrap each of them in cling sheets…wil they stay fresh till 8th morning? Also if i make your apple cake, will that stay too? Please let me know….will be waiting eagerly for your reply.

      Hi, muffins are normally at their very best the day they are baked or the following day. They could be ok for a couple of days but I would recommend that you maybe do a trial run and make them before the date just to see how they keep. That way when you make them again on the 5th you will know for sure how well they will keep for that long. The apple cake should be able to last that long without any problem.

      W/Salaam, yes you can omit the nutmeg, the cinnamon too although cinnamon lends the best aroma to these muffins.

    1. I would not recommend that with banana muffins as the bananas will oxidise the longer they sit.
