Yummy filling sandwiches that can be put together very quickly. These taste even better than they look!
Ingredients
- 1/4 kg boneless chicken breast, chopped into small pieces
- 1 grated carrot
- 2 small capsicum, red and green if possible, grated or chopped finely
- 2 tbsp. sweet corn (optional)
- 1 small onion, chopped finely
- 1-2 green chillies, chopped
- 1/2 tsp. garlic paste
- salt to taste
- 1 tsp. chopped coriander
- 1/2 tsp. ground cumin powder
- pinch of tandoori masala (optional)
- juice of half a lemon
- 1 tsp. soya sauce
- 1 tbsp. butter
Instructions
First prepare the filling of your choice. In this case I used my spicy chicken filling…but you can use any filling that you like.The filling can be prepared well in advance and frozen for later use to save on time.
Heat the butter in a non-stick pan, add the onions and stir fry until they're translucent. Do not brown them. Add the chopped capsicum and grated carrot, stir-fry for about 5mins until they start to soften. Add the raw chicken pieces and keep stirring until they start browning. Add the chilies, garlic, salt, cumin powder, tandoori masala and sweet corn. Sauté until the chicken pieces become tender and well-done. If the mixture sticks to the pan and the chicken is not yet done, add a tbsp. of water and cover until ready. Make sure that the mixture is completely dry. Finally, add the coriander and soya sauce, mix well and switch off. Pour the lemon juice on the mixture, and whilst still hot, use a wooden spoon to smash the small pieces of chicken so that they become shredded. Adjust salt/chili to your taste.
You can smoke the mixture with a coal and some oil to give it a nice bbq aroma.
For the buns you can use THIS recipe, just shape the rolls longer to resemble submarine buns.
Now slit open the hotdog buns, spread a small amount of mayonnaise and ketchup , followed by a light sprinkling of chili powder if you want them super spicy. Then add the filling and some grated stretchy cheese (use the best quality you can, I used mozzarella for these). Then add a small squirt of ketchup again. Put them in a pre-heated oven at about 170 C for about 7 minutes or until the buns are slightly toasted and the cheese has melted a little.
Serve hot and enjoy! 🙂
salaam sis, this recipe sounds lovely. im going to try this tmrw but would like more info on how i would smoke the mixture with a coal? i do have lots of coals at home my husband uses for shisha so i gues they can come to some use to me too finaly lol. thanks.xx
W/Salaam lol, I like your way of thinking!! Light a small piece of coal, then place it carefully on a piece of foil. Place that foil in the middle of the dish containing whatever you plan on adding the bbq flavour to. Drop some oil on the lit coal and it will immediately release lots of smoke. Cover the dish and let the smoke get retained in the dish so the food in there absorbs that smokey bbq flavour. Leave it for a minute or two, then open and discard the coal and foil.

W/Salaam. It is different from garam masala, it is a bright reddish/orange spice powder that has it’s own very unique flavour and also adds colour the the dish.
will I get it in Nakumatt or spicy shops?
Yes you will, check for the Shan Masala boxes, they have tandoori masala too. It may be labelled as Chicken Tandoori Masala, same thing.
