Potato Pancakes

Lighter than air potato pancakes, these yummy snacks also make for an excellent side-dish!
Servings 10 Pancakes

Ingredients
  

  • 2 cups mashed potatoes
  • 1 onion finely diced
  • 1/2 tsp garlic paste
  • 2 tbsp all purpose/plain flour
  • 2 eggs lightly beaten
  • salt & pepper to taste
  • oil for frying
  • Variations: play with adding paprika cumin, fresh chopped herbs, corn, peas…anything you like.

Instructions
 

  • Heat oil in a skillet over medium heat.
    In a bowl, mix mashed potatoes, onion, garlic, flour, eggs, salt, and ground black pepper with a fork.
    Fry about 2 tablespoons of batter at a time (that’s 3-4 pancakes for each batch). Flatten with the back of the spoon. Fry about 4-5 minutes, or until nicely browned. Using spatula, flip gently to other side and fry 4-5 minutes more.
    Drain on a plate lined with paper towels.
    Serve hot!

Notes

Do not flip them over before they are properly browned otherwise they will stick. Make sure the oil is hot before putting in the potato pancakes. Also, do not crowd the pan, fry them a few at a time so they can get properly done and remain crisp.

    Salam made them today the pancakes didn’t set and kept breaking up. Added more flour and they were better.
    But found them too oily. I shallow fried. Also it felt like the mixture didnt cook properly.

      W/Salaam, did you boil the potatoes when they were already peeled? Sounds like they had too much water in them, that would cause them to break up. Always boil the potatoes with the peel on and then peel and mash them for dry results ideal for such dishes.

    Salaams Fauzia. Can these be grilled/baked? If so, please advise at what temperature and for how long. Thanks and God bless!

    1. W/Salaam, yes you can grill
      W/Salaam, yes you can grill these at around 200 C (fairly hot oven) for about 10-15 minutes, flip them midway through baking to ensure all sides are evenly cooked. The reason I prefer pan frying with a very light drizzle of oil is that they retain a lot more moisture this way as opposed to oven baking/grilling which sometimes tends to dry them a little bit.

    Thank you:) My hubby has to be on an oil free diet for some time due to some stomach issues, hence everything I make has to have zero oil! Will definitely fry them when he is better Inshallah!
