Minced Chicken Nuggets

While I love my crispy chicken nuggets (RECIPE HERE), this is an excellent alternative for those who want nuggets made out of minced/ground chicken instead of chicken cubes. They can either be baked or fried, making them very versatile for those who prefer one method of cooking over the other.
Servings 4 people

Ingredients
  

  • 500 gm boneless chicken breast cut into small pieces
  • 1/2 tsp. garlic paste
  • 1/4 tsp. ginger paste
  • 1 tsp. salt
  • 1/2 tsp. black pepper powder
  • 1/2 tsp. cumin powder
  • 1/4 tsp. oregano optional
  • 1/2 tsp. paprika powder optional
  • 1 small onion roughly chopped
  • 2 tbsp. coriander chopped
  • 1 green chilli more for spicier
  • 1 tsp. lemon juice
  • 1/2 cup flour mixed with 1/4 cup cornflour add 2 pinches of salt and pepper for seasoning
  • 1-2 eggs
  • 1 1/2 cups breadcrumbs you can add spices to the breadcrumbs for extra flavour if you like

Instructions
 

  • Put the chopped onion in the grinder and process. Remove and squeeze out the excess moisture. Then put the minced onion back in the blender, add the coriander, chilli, lemon juice, garlic and ginger. Put the chopped chicken breast and whizz until the mixture is smooth and well combined.
    Transfer the mixture into a bowl, sprinkle the salt, pepper, oregano, paprika and cumin powder. Mix well. Refrigerate for 30 minutes.
    When ready to fry or bake, prepare three bowls or plates. One with the seasoned flour, the second with the beaten eggs and the last with the seasoned breadcrumbs.
    Make small balls out of the minced mixture, then one at a time, roll first in the flour, dip in the egg and finally in the breadcrumbs. Flatten the ball to form a round/oval shape and put the prepared nuggets on a plate. Continue until all are coated and done.
  • Heat the oil and fry the nuggets on both sides until golden, about 4-5 minutes per side. Drain on kitchen towels and serve with accompaniments or a dip of your choice.
    If you prefer to bake them, use the same method of preparing the nuggets, then place them on a lightly greased tray and bake in a preheated oven at 180C for about 15-20 minutes or until golden. Be sure to flip them once midway through baking.

Notes

You can omit the breadcrumbs if you want, in which case you will need to roll the balls first in the flour, then dip them in the egg and then roll them once again in the flour and flatten.
