Matoke/Green Bananas

Another African specialty that I love, raw green bananas cooked in coconut milk with some cubes of mutton meat.
Servings 2 people

Ingredients
  

  • 12 matoke/green bananas
  • 200 gm mutton/lamb pieces boiled until tender with salt/ginger/garlic/black pepper
  • 2 cups light coconut milk
  • 1 cup heavy coconut milk
  • pinch of turmeric
  • some chopped coriander
  • 2-3 green chillies chopped
  • 1 tsp. red chilli powder
  • juice of 1 lemon
  • 1/4 tsp. garlic paste

Instructions
 

  • Peel and chop the bananas, then put them in a pan and add some water…just enough to cover the matoke. Add some salt, ½ tsp. chilli powder, coriander, chopped chilli, ½ tsp. turmeric. Cover and boil until soft and easy to mash. Then mash to an almost paste.
    Add the meat to the mashed matoke. Put in the light coconut milk and mix well. Let it start simmering until it thickens then add the heavy coconut milk, lemon juice and the rest of the ingredients, garlic, coriander etc. Simmer for a few more minutes until the consistency is to your liking. Mix well and taste. Adjust as per your preference then switch off.
