Hubby’s Special Breakfast

I got this recipe from my wonderful hubby who makes this delightful breakfast for us every once in a while. Thanks hun!
Servings 2 people

Ingredients

  • 4 eggs beaten
  • 2 green chilies chopped
  • 1 medium onion chopped in the processor
  • 1 tomato cubed
  • 2 tbsp. milk
  • pinch of turmeric powder
  • 1/4 tsp. garlic paste
  • salt and pepper to taste

Instructions

  • In a bowl, beat the eggs with the milk until frothy then set aside.
Heat 2 tbsp. oil in a frying pan. Add the onions and fry until soft, then add the garlic and fry until fragrant. Then add the tomatoes. Cook them on low heat until they are very soft.
Add the green chilies, turmeric powder, salt and pepper. Then add in the eggs and, using a wooden spoon, scramble the eggs as they cook to break it up into little pieces. Cook until done.
Switch off and serve immediately with toast, mandazi or chapati/parathas.
    Enjoy!

  1. As u said u r from Yemen and grew in Africa so does they mean u are from Arab origin ? but how come most of your dishes are South East Asia? for example this paratha, scrambled egg & tea….chicken tikka…haleem…karahi chicken…tandoori chicken…puri ….though i did find some Kenyan origin dishes too. Sorry dont mind my question.
