Foil Packet Fish
Here’s a healthy yet incredibly flavourful way of preparing any fish fillet. A piece of aluminum foil is folded to form an airtight packet in which fish that has been seasoned is sealed in and then baked in the oven to reveal a moist, aromatic and perfectly cooked result.

Ingredients
- 1 portion of fish fillet of your choice
- 1 small capsicum sliced
- 1 small onion sliced
- 1 tsp oil
- juice of half a lime or lemon
- 1/4 tsp paprika powder
- 1/4 tsp red chilli powder or flakes
- 1/4 tsp garlic paste
- salt and pepper to taste
Instructions
- Rinse the fish fillet and pat dry.Make a paste using the paprika, chilli powder, oil, garlic, salt and lemon juice. Rub this on the fish fillet and set aside for 20 minutes.Preheat the oven to 200 C.Take a large piece of aluminum foil. In the centre, arrange a few slices of onion and capsicum slices. Place the fish on them and arrange a few more slices on top of the fillet. Sprinkle a bit of black pepper.Carefully seal all the edges to form an enclosed packet. Place the packet on a baking sheet and bake in a preheated oven for about 15-20 minutes, depending on the size of the fish. Fish is done when it flakes easily with a fork.Serve over rice or alongside roasted veggies of your choice.Enjoy! 🙂
