Fluffy Pancakes

Here is my favourite recipe for yummy, lighter than air, fluffy pancakes that I have been using for close to 10 years. I had experimented with SO MANY pancake recipes before this one, but NONE comes close!
Servings 10 Pancakes

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 3/4 tsp. salt
  • 2 tsp. baking powder
  • 2 tbsp. sugar
  • 2 large eggs
  • 1 1/4 cups milk
  • 1 tsp. vanilla essence
  • 3 tbsp. melted butter or veg oil
  • greased measuring cup I used the quarter measuring cup
  • griddle or non-stick pan
  • 3 large bowls
  • whisk/hand-mixer/cake mixer

Instructions
 

  • Sieve and mix dry ingredients with a whisk or toss them with a fork in bowl 1. (Flour, sugar, baking powder, salt)
    Separate the egg yolks and set them aside in bowl 2 (this bowl should be the largest).
    Whip the egg whites in bowl 3 until fluffy and peaks form, then set aside.
    Add milk and vanilla essence to the yolks and beat together until they bubble. Mix in the oil/butter then add in all the dry ingredients and whisk together carefully until they’re incorporated. Don’t be tempted to over mix, a few lumps are fine. Too smooth a batter will give u flat rubbery pancakes instead of the soft/airy fluffy ones we’re going for.
    Fold in the egg whites in 2 additions. (Meaning first add half the eggwhites and gently fold them in then add the other half of the eggwhites and fold them in too)
    Let the batter rest for 15-20mins.
    Heat pan or griddle to max, lightly coat the surface with oil.
    Then using your greased scooping cup, scoop and directly pour the mixture on the pan. Don’t try to round the pancake by pouring in a circular way, just dump the mixture and it will will round itself out.
    When bubbles start forming on the top side of the pancake, gently ease the spatula under the pancake and turn it. Don’t pat down or press down the pancake, it will ruin the texture inside. You can peek to check if the under side is done and remove once ready.
    Keep adjusting the heat, if it goes too high you can keep reducing and increasing as is necessary.
    Always try making half the measurement of the recipe in your first attempt, increasing as you get more adept. Good luck!!!

    1. W/Salaam, it means fold HALF the egg whites first, then add the other half of the egg whites and fold. Not all the egg whites in one go.

  2. I dont know the correct measurement of the cup used in the recipe since i dont have any measurment apparatus with me. I tried by using the measurment you gave, like 8 tbsp=1 cup. Am i Right?

    1. Yes that should be fine, although I would advise you to get either measuring cups or a scale for more accurate measurements. Spoon sizes vary and you may end up with different results than what is expected.

  3. when we add mil and Vanilla essence in the yolk, are we supposed to beat it with an electric beater or by spoon?

  7. Hi Fauzia.. I think ur a brilliant cook. And blessing for everyone like me who r beginners but love to cook and try different things. Thanks alot for all ur recipes..
    I just wanted to ask one question, iv tried pancakes manier times but mine never turn out to be this fluffy and thick what am I doing wrong? Do we need smaller pan for this? And if we do need small pan than how does it cook through? I make thin ones and they take ages to cook just wondering how long will this thick of a pancake will take?

    1. Hi and thanks! It shouldn’t take that long to cook a pancake. I think you must be over-mixing the batter after adding the egg whites, which makes them deflate and become thin. When the egg whites are mixed GENTLY, the batter becomes light and fluffy so the pancakes become very airy and cook really fast too. Do try again and please follow the recipe as closely as you can especially during the mixing of egg whites for best results.

    1. My dear there is milk used in the recipe, please follow exactly and don’t use any ingredient not mentioned in the recipe.

    1. The vanilla adds a good flavour but you can leave it out if you want or add flavouring of your choice.

    wanted to know whether i could prepare this batter beforelong, lets say at night to be used the next morning for breakfast( as i think i wont have enough time to prepare/ let it rest for the time you said…etc) i doubt whether they will come out as you described if i do so, so plz help

    1. W/Salaam, thank you. I would not recommend making this batter ahead of time because the egg whites will surely deflate and you will not achieve the fluffy texture that these pancakes have.

  9. salaam fauzia, u are indeed an inspiration to people lyke me, tnx 2 u my family gets new recipes everyday. jazakillah khairan.my problem is with d measurements my 1 cup is 250ml, half cup is 125ml etc.d spoons my 1tbs reads 15ml,1tsp is 5ml,etc. pls are they d same wit urs cos wen i tried dis pancakes the dough was too thick, pls wat do i do. tank u

  10. S/alaikum i want to make say 2-3 custard bucket ot flour for pancake,how do i get d exact Quantity of ingredient to use.U have really make my house a home for my famly because my fmly hadly eat out now but we enjoy our round table meal together

  13. Superb recipe….just turned out so good. Apart from simple pancakes i added a little more sugar to the mixture and put 1 tbsp of batter in each section of sandwichmaker. Closed it and cooked for approx three minutes on one side and thn changed side till light golden color. Triangle cakes were liked by my kids.a big hit.

    1. W/Salaam, thanks. You can use either milk, whole milk or even skimmed milk…any is fine.

  18. Hi! Melt 1/3 cup butter with 1/3 brown sugar, a pinch of salt and 1 tsp vanilla essence on low flame and bring it to boil. Take it off the heat and add icing sugar (roughly 1/3 cup) to make the mixture a little thicker. Once that is done add heavy cream, about 1/3 cup. Just mix it well with a spoon and your caramel sauce is ready.

    Referring to your following instruction:
    “Whip the egg whites in bowl 3 until fluffy and peaks form, then set aside.”

    Do you mean soft peaks or hard peaks?

    Also let me know, how many pan cakes will this batter make?

    1. Firm peaks. Have never counted how many, it depends on the sizes. Around 10-12 pancakes approximately.

    1. 1 cup of milk is 200ml. 1 and
      1 cup of milk is 200ml. 1 and a quarter would be 250ml. Whip the egg whites to soft peaks, not hard peaks.

I don’t have a hand mixer so wasn’t sure. Basically, can I do everything in this recipe using an electric whisk? Obv except the folding egg whites part. Please let me know.

      Thanks for the feedback, I would not recommend storing leftover batter as the whipped egg whites would deflate and you may end up with pancakes that are not as fluffy.

    Thank u for your reply Fauzia ! I tried them and they tasted good but weren’t as light and fluffy as I thought they would be. Any idea where I might have gone wrong ? I tried to fold egg whites gently and quickly to avoid deflating them so don’t know what happened. Also, my pancakes were a little thick – what I mean is that after pouring the mixture in pan, it didn’t spread out much that’s why I felt they were a little thick. Maybe the consistency of my batter was not right. How can I can adjust this ? One last qs, I read your note about whipping egg whites and added a bit of lemon juice . Is it necessary to add this kind of acid every time? Or depends on the recipe . Sorry I know I have asked many qs but was a little confused.

    1. You’re welcome! Do give it
      You’re welcome! Do give it one more try and try to make sure that the egg whites are full and fluffy before being folded into the batter. Also all the ingredients should be at room temp. And make sure the baking powder is fresh. I normally do not use lemon juice in my egg whites and they turn out just fine. It is just an extra tip for those who have difficulty with whipping egg whites.

I think I know where I may have gone wrong – my regular sugar got over so I added little icing sugar which may have affected the texture I think. So won’t do that next time.
