Crispy Fries
Takes a bit of extra effort to get them really crispy and fantastic, but the result is well worth the trouble! They are tastier and healthier when home-made.

Ingredients
- 500 gm white potatoes
- oil for deep frying
- salt to taste
Instructions
- Peel and cut the potatoes into finger sized strips. Rinse the strips to remove any excess starch. Put them in a pan and add enough water to cover them, then boil for 2-3 mins…just until the strips are half-cooked.Remove and drain, pour cold water over the strips to stop the cooking process, then lay them out on some kitchen towels to dry. Fry in hot oil until crispy. Sprinkle salt right before serving. The fries will be crispy from the outside and beautifully soft when you bite into them. Serve with a dip of your choice!

Do you make sure you dry them before frying? Also, do not salt them until right before serving.
can we freeze the boiled potatoes for a few days…? i mean to make them easy for lunch boxes of kids..if yes then how?
Am not a fan of freezing cooked potatoes as they tend to release water when they thaw. You can do a test run, fry them directly from the freezer though, do not allow them to thaw. That will help keep them intact. If you like the results then you can freeze more. 🙂
