Creamy Garlic Prawns with Lime-Coriander Fried Rice

A fabulous and incredibly aromatic meal which packs quite a punch in terms of flavour.  Super easy to prepare too!
Servings 4 people

Ingredients
  

Ingredients for Creamy Garlic Prawns

  • 500 gm prawns shelled and de-veined
  • 3 tbsp butter
  • 3 cloves of garlic peeled and crushed or 1 tsp. garlic paste
  • 1 cup fresh/cooking cream
  • 2 tbsp finely chopped coriander or basil
  • a dash of black pepper powder
  • salt to taste

Ingredients for Lime & Coriander Fried Rice

  • 3 cups pre-cooked plain white rice day-old leftover rice is best
  • 2 tbsp butter or oil
  • juice of 1 lemon
  • 5 tbsp finely chopped coriander
  • 1-2 red chilli chopped

Instructions
 

  • Heat the butter in a frying pan, add the prawns and cook for about 3 minutes until they are almost done and pink. Turn them over once during cooking. Add the garlic paste and half of the chopped coriander. Stir-fry for half a minute, taking care not to burn the garlic. Remove the prawns onto a plate and set aside.
  • Next add the cream into the same saucepan and season with salt and pepper. Reduce the heat to low and allow the cream to gently simmer for a minute. Put the prawns back into the pan and mix. Simmer for another minute and turn off the heat. Careful not to over-cook the prawns as that will make them toughen.
  • Adjust salt and pepper to your taste. Garnish with remaining chopped coriander. Serve over rice or spaghetti.
  • Heat the butter or oil, add the cooked rice, warm everything through. Squeeze in the lemon juice and add the chopped coriander and chopped red chilli. Stir everything until well-combined. Serve with an extra slice of lemon on the side. Enjoy! 🙂

  1. i added cornflour to the creamy prawn coz it wasnt creamy enough. also added mixed veggie, mushrooms and pepper bell as well as siaw – soya sauce- to the lime coriander rice

  2. tried this recipe out last night, was totally awesome! i added finely chopped chillies for a kick! and added some milk to the cream mixture to make it more of a soup. served it with garlic rolls!

    Also, does “shelled and de-veined” also mean having the tails removed?

      Hi, thanks for the lovely feedback! Shelled means the shell removed either in its entirety or just the top part if you want to leave the tails on. Deveined means the string like vein that holds the dirt on the top part of the prawns.
