Caterpillar Bread - Step by Step
For lack of a better name for this yummy bread, I’ve decided to call it Caterpillar bread (because it sort of looks like a caterpillar, although I assure you no caterpillars were harmed in the making of it! :D)It’s a soft bun with a filling, pretty to look at and delicious in taste. Big hit with the little ones!The filling can be anything you like, can be veggie, chicken, cheesy, tuna, etc. I have used my Spicy Keema Filling
Servings 5 Buns
Ingredients
Ingredients for Dough
- 2 cups all-purpose flour
- 3/4 cup warm milk
- 1 tsp. instant yeast
- pinch of baking powder
- 1/2 tsp. sugar
- 1 tsp. salt
- 1 egg lightly beaten and divided in half
- 1 tbsp. melted butter
- 2 tbsp. oil
- 1 tbsp. milk powder
Instructions
- Sieve the flour, then add milk powder, baking powder, sugar, yeast and salt. Then add the oil, butter and half the egg (reserve the other half for brushing the bread later) and mix together. Now add the milk gradually whilst kneading. You might not need it all, so add it sparingly until your dough is nice and soft. If more milk is needed to get a soft dough consistency, warm a litte more and use. Knead for a good 8-10 minutes. The more you knead the softer the bread results will be.Touch a bit of oil with your fingertips and apply all over the ball of dough. Cover in a bowl and set aside for 40 mins to an hour for it to double in size.
- STEP 1 & 2 – Divide the dough into 5 sections. Start rolling each one into an oval/rectangular shape, about quarter inch or less thickness.
- STEP 3 & 4 – Brush with butter, then cut strips about a third of the way into the oval on one of the longer sides of the rolled out dough.
- STEP 5 & 6 – Add your filling on the opposite side of where the strips have been cut. Fold the dough over the filling to enclose it, then roll gently all the way to the end.
- STEP 7 – The strips will cover the top of the bun and give a pretty finish. Try and pinch the ends of the strips under the dough so they do not unfurl or open up during baking.
- STEP 8 – Place on a greased tray and repeat with the rest of the balls of dough. Cover with a light kitchen towel and allow the buns to rest for about 30 minutes to allow them to expand again slightly.
- When ready to bake, preheat the oven at 180 C. Brush the remaining half egg over the bread and sprinkle sesame seeds. Bake for about 18-20 minutes or until the buns are done and golden.
- STEP 9 – Remove and brush them with some butter, keep them covered with a kitchen towel to retain their softness until time for serving. Enjoy! 🙂

I got perfect shape n color but baking time was 1 hr for me, y is dat so? & base was hard but taste was so gud ALHAMDULILLAH.
Other thing is dat while kneading i needed more than a cup of milk like 1 1/4, & i used simple meida then added recommended ingrediednts, is dat okay?
Can i restore rest of dough in refrigerator?

W/Salaam, sounds like it was overbaked from the bottom. As for liquid, normally that varies with types/brands of flour. Some absorb more than others so always just add as much as you need to make the dough soft. You can refrigerate the leftover dough wrapped well. Not more than a day, otherwise freeze. If it stays too long it will smell yeasty. I use SAF Instant Yeast. Baking powder I just use whatever brand I find.

W/Salaam, you can skip the milk powder and as for the tandoori masala, that is for flavour and a reddish colour, you can leave it out too. Sesame seeds are purely decorative, just omit them if you do not have them.

W/Salaam, yes you can use the same dough recipe. I do not understand though why you want the oven to preheat at 220 C. Recipe needs it at 180. That means from start to end the temp has to be 180 unless your oven is too hot then turn it down to 170.

Hi, the two are the same thing. The colour depends on your oven actually, if you have a top grill turn it on during the last few minutes of baking to get a good colour.

Sorry I do not know this flour you mention. Use a plain wheat flour that you would use for cakes and so on.

I just made this bread using
I just made this bread using leftover keema mixed with some plain Greek yogurt, tomato paste, and chili garlic sauce.The recipe didn’t indicate the amount of keema btw. I think I used about 8tbsp..so maybe 1 cup? Not sure. You need to set aside about three hours to make this, because you have to wait for the bread to rise twice plus it makes a lot of mess. The rolls are much smaller than in the picture. When I had to fold the strips of dough over they kept sticking to the counter despite having flour on them. Anyway, I used a spatula and managed to fold them over. After I finally had all the rolls assembled, the second challenge them was moving them from counter to the tray. I had four paper length rolls; one split so at the end I had 5. But actually, the half size was easier to hold so maybe next time I’ll cut the dough into eighths. Ok finally after all this effort, I did the egg wash and put it into the oven. It came out very beautiful and golden. My mom said that it needed to go with some sauce (but maybe that’s because I didn’t use the given keema recipe.) when I served it with knorr hot and sour soup, it was very well-received. I was thinking it would be like a tasty Stromboli but it was more like an accompaniment. I think next time I’ll add more sugar to the dough next time (it was kind of plain) and also try some cheese in the filling.
