Semolina Pudding

A very simple, light and delicious pudding that is quick to make and perfect for a refreshing after-meal dessert.
Servings 4 people

Ingredients
  

  • 500 ml whole milk
  • 2 heaped tbsp. fine semolina/sooji
  • 5-6 tbsp. sugar
  • 1 tsp. vanilla essence
  • a few drops of red food coloring
  • 1 scoop of vanilla ice-cream optional
  • crushed nuts for garnishing

Instructions
 

  • Mix the semolina in some of the milk to form a thick paste.
  • Pour the rest of the milk into a pan, add the sugar and red food coloring (just enough to turn the milk a nice pink color). Bring to a boil and then add the semolina paste and the vanilla essence. Keep the heat on low and simmer gently whilst stirring until it thickens. This should take about 5-8 minutes to reach the consistency of custard pudding.
  • If you prefer it thicker, simply mix some more semolina in a bit of milk and add it in, simmer some more. If you want it thinner, add a bit of milk and boil for a bit. Keep in mind that the pudding will thicken some more as it cools in the fridge once it is done.
  • Turn off the heat, add the scoop of vanilla ice-cream and stir until it has melted into the mixture. This adds some extra richness and flavor to the pudding. Now pour the pudding into serving bowls, garnish with nuts and allow to cool. Cover and refrigerate until cold. Serve and enjoy!

    1. Just multiply everything by 4 or 5 depending on whether you want to serve big bowls or little ones.

    1. W/Salaam, did you boil it long enough? Make some more of the semolina paste and add it in and simmer some more until it thickens.

  6. I made it and its delicious. Although I modified a little. Aside from sugar I added brown sugar and a can of evaporated milk.. It gave a pudding a very nice light brown texture and it was delicious. I would highly recommend people to try the evaporated milk and brown sugar.
    Even if you follow the exact recipe of fauzias.. it is devine.. Fauzia you rock:)

    i tried this and it tasted nice but the semolina had some lumpy bits once added to the boiling milk, what could have been the reason?

    1. W/Salaam, 2 tbsp is normally
      W/Salaam, 2 tbsp is normally enough to thicken the pudding. If you find the pudding too light you can add more semolina. It will make it thicker.

    Thank you Mam for such a lovely recipe. I have been trying before but it didn’t worked for me but this one is really amazing. Just prepared the Semolina pudding and it is great both in taste and looking. There was just one thing which i didn’t used ”Vanilla Essence” because it is unavailable here in Sweden so I used Vanillasocker (Vanilla sugar powder) a Swedish alternative and it worked very well. I have used some of your other recipes as well and will hopefully share photos with you.

    I’m a fan of your recipes. I have tried many of them & really they came well. But unfortunately only the semolina pudding went wrong.
    I tried it yesterday & it’s not set. Is the consistency like a soft custard which can not be cut into pieces?

    i have coarse semolina which is light yellow in color can i use that too dear fauzia :)?

    1. Are you sure it is semolina
      Are you sure it is semolina though? Am concerned that it is yellow. If it is semolina then it should be fine, just grind it a bit to get it to a finer consistency.

    1. No I do not know that brand,
      No I do not know that brand, i normally buy it from any small asian shop. It should be ok then. 🙂
