Tamarind Juice
Growing up, this used to be a family favourite. Highly refreshing during hot summer days, this juice is best served icy cold. If you like tamarind, you will LOVE this sweet but tangy juice.
Servings 6 people
Ingredients
- 100 gm tamarind seeds with pulp
- 2 cups hot water
- 1/2 to 1 cup sugar depending on how tangy the tamarind is
- 1/2 tsp. salt
- 4 additional cups of cold water
Instructions
- Wash and rinse off the tamarind pulp. Put it in a bowl and then add the 2 cups of hot water to it. Cover the bowl and allow it to stand for 2-3 hours.Mix and press out the pulp from the seeds, then sieve the mixture to seperate the juice from the rest of the seeds/pulp and strings.Next, add half a cup of sugar and the salt. Give this a mix until the sugar is dissolved. I find this easier to do in a blender, it mixes the sugar faster. Then add the additional water to dilute the juice to a thin consistency. Keep checking the taste and add more sugar or water if needed.Chill until icy and serve cold! 🙂
