Savoury Muffins

Muffins certainly do not always need to be sweet!  These incredible moist and fluffy muffins make for something deliciously different and are guaranteed to be a hit with all who try them.  They are perfect after-school healthy snack for kids but are great for adults too.
They freeze beautifully so these can be made in larger batches and frozen in ziploc bags.  Simply warm them up and serve as and when needed.  You can mix and match the ingredients, using up whatever you have on hand.  Perfect addition to lunch boxes!
Servings 12 Muffins

Ingredients
  

  • 2 cups self-rising flour
  • 1/2 cup boiled shredded chicken any leftover chicken will do
  • 1/2 cup grated cheese I like to mix cheddar with mozzarella
  • 1/2 cup mixture of chopped capsicum onion and sweet corn (you can mix chopped mushrooms or grated carrots too)
  • 1 tbsp. chopped coriander
  • 1 chopped green chilli or chili flakes optional for extra spice
  • pinch of salt and pepper
  • 1/2 cup melted butter 125 gm
  • 1 egg lightly beaten
  • 1 cup milk

Instructions
 

  • Preheat the oven to 180C.
    Grease the cups of your muffin or cupcake pan.
    In a large bowl, sift/sieve the flour, then add all the dry ingredients (chicken, cheese, capsicum, onion, sweet corn, coriander, chilli, salt and pepper etc). Stir them together so they are evenly distributed in the flour.
    In a spearate jug, add the three liquid ingredients (milk, butter and egg).  Lightly whisk with a fork to combine.  Now pour the liquid ingredients into the bowl that has the dry ingredients and stir until just combined.  Do NOT over-mix as this will make the muffins chewy.
    Spoon the batter into the muffin cups and bake for 15 minutes or until skewer stuck in the center comes out clean.
    Remove the pan and allow them to cool slightly.
    Enjoy!  🙂

Notes

You can make your own self-rising flour by adding 1 1/2 tsp. baking powder and a pinch of salt to EACH cup of plain/all purpose flour.

      Hi, Just keep the dry ingredients separate and the liquid ones separate. Then you just have to mix and bake in the morning. But make sure you get everything out of the fridge at least half an hour beforehand to make sure the ingredients are not cold.

    1. Wrap them in tissue and
      Wrap them in tissue and microwave for 30 seconds to a minute or until warmed through. They will keep for up to a month frozen, make sure they are wrapped well in cling film or in a freezer bag.

    hey Fauzia… two questions please…. first – how many muffins does this recipe make? secondly if I were to make them in larger quantities, how do I alter the recipe?

    Also your pizza rolls… its awesome awesome recipe, have made them twice… but it only makes I think 10or 12… again if I were to make them in larger quantities, how do I alter the recipe? is it as simple as doubling the recipe or shall I make them in two separate batches? (more hard work).. please let me know…

    I really love ur recipes im making savory muffins but its taking more time its not done in 15 min nor in extra 7 min still its in the oven but it seems to be done in 3-4 min.
    But why it took long.

      Hi, thanks for the lovely feedback! Yes you can warm them up the next day in the oven, make sure it is preheated and put them in just for a few minute to prevent them from drying out.

    Hi Fauzia, lovely recipes, I tried the biscuit pudding and honeycomb bread, they were awesome!! I have baked the savoury muffins but it did not colour on top and it’s still a little wet after cooking for 25 min, can I fry them now so this does not get wasted or what can I do?

      Hi, sounds like there could be an issue with the oven baking, less heat from the top than from the sides. Not sure if frying them would work but you could try toasting them in an oven toaster.
