Chicken Alfredo

The KING of pasta dishes. One of my personal favourites, this makes for a very rich, creamy and luxurious pasta and chicken dish. 
Servings 4 people

Ingredients
  

  • 300 gm chicken breast cut into chunks or strips
  • 1-2 tbsp oil
  • 1/2 tsp each salt/pepper for seasoning the chicken
  • juice of 1 lemon
  • 200 gm fettuccine pasta or any long flat pasta
  • 3 tbsp or 45 gm butter
  • 1/4 tsp garlic paste
  • 3/4 cup heavy liquid cream like double or whipping cream
  • 1 cup grated paremesan cheese 65 gm (or use a combination of mozzarella and cheddar)
  • 1/4 tsp oregano
  • salt to taste

Instructions
 

  • First, prepare the Chicken
    Season the chicken strips/chunks with the lemon, salt and pepper. Let this sit for at least half an hour. Heat the oil in a nonstick frying pan, then brown the chicken in batches without crowding the pan, making sure both sides are cooked for about 2-3 minutes per side. Remove and set aside. At this point, if you want to add sliced mushrooms to this dish, saute them until done and set them aside.
    Next you can prepare the Pasta.
    Tips:
    You can substitute the Parmesan with a combination of mozzarella and cheddar, finely grated. Also, add an extra quarter to half cup of milk if you are substituting in order to keep the sauce smooth and not too thick.
    Melt the butter in a medium pan over low heat. Add the garlic paste and fry until fragrant. Then add the heavy cream and simmer for about 5 minutes on low heat. Next add the parmesan cheese and whisk it in quickly until it melts. If you find the sauce too thick, add an extra quarter cup of milk to thin it out slightly. Crush the oregano between the palms of your hand to release its' flavour, then add it into the mixture. Add the chicken into the mixture, adjust salt and simmer for another 5 minutes to ensure that the chicken is well-cooked. Turn off the heat and set aside.
    Next cook about 200 gm of fettuccini pasta according to package instructions and drain. Return the pasta back into the pot, then add the chicken alfredo sauce into it and toss to combine.
    Serve hot and garnish with chopped fresh coriander or parsley.
    Tips:
    This recipe is originally not supposed to be spicy, but I like to add some chopped green chillies into the sauce just before mixing with the pasta.

    If we use Whipping cream Will it get too much Sweet taste? and also can we Add Craft Cheese behalf of Mozzarella?

    1. W/Salaam, whipping cream is not sweetened, or if the brand you normally use has sugar in it then please use unsweetened liquid whipping cream. Have not tried with Craft Cheese, you can give it a try if you like.

    This is my favourite pasta and I can’t beleive Alhumdulillah I and made this at home and it tasted bette then most restaurant ones! Plus so easy to make!!

    my kids just love this pasta thankyou for the recipi .inshaallah i will make it tmrow, i know whipping cream but what is double cream .which brand do we get it in? please let me know.

    1. W/Salaam, different countries have different brands, it is a type of heavy cream similar to whipping cream (a little heavier). You can use whipping cream in it’s place if you cannot locate double.

    1. W/Salaam, sorry no idea. 🙁 You can omit parmesan if it is not easily available there.

    Asa, if we heat butter it gets black. Sauce is supposed to be white. Is there any alternative?

    1. Butter should NOT turn black
      Butter should NOT turn black when heated. If it is for you, then it means you are over heating it and it is burning. Keep the heat on VERY LOW to prevent this from happening. Burnt butter will have a very nasty taste and it will spoil the end result.

    Well what is heavy cream or double cream.. I don’t get it in UAE .. So I used simple thick cream the one comes in tetra pack.. Is it ok.. My result was excellent

    Can you please let me know what should be used in this case..Almarai whipping cream? But it doesnt stand thick on beating, stays liquidy.
    Dream whip? But its used in desserts ..its sweet :-/
    Or Philadelphia cream cheese? (used in cheesecakes) ?
    Can anyone suggest me please !! :'(

    1. You are not supposed to beat
      You are not supposed to beat the cream for this recipe, use it in LIQUID form. And yes almarai is fine.

      W/Salaam, best to omit the oregano, do not substitute with thyme as the taste will change. 🙂

      Have never used either of those two creams, sorry dear. Not sure which to suggest. It should not be a dessert/sweetened cream. Any good heavy cream will do.

      W/Salaam, you can use any heavy cooking cream. And yes I guess you can use tuna but am not sure how the taste with be, the combination of tuna and cream might not be so good. You can give it a try though.

      W/Salaam, I personally would not like the combination and also it would not be a very authentic alfredo sauce with all the other veggies, however it is a personal preference and if you would like more veggies in there you can absolutely add them. 🙂

    Should I use double the quantity of chicken, butter, cream and Parmesan cheese if I want to make double the quantity i.e with 500 grams of pasta?
