Chicken Cutlets

Healthy chicken cutlets, incredibly tasty and very easy to prepare.

Ingredients
  

  • 500 gm chicken mince
  • 1 tsp each salt & pepper
  • 1/2 tsp. turmeric
  • 1 tbsp. ground cumin
  • 1 green chilli chopped fine
  • 1 lemon
  • chopped coriander & mint
  • 1 tsp. ginger paste
  • 1 tsp. garlic paste
  • 1/2 tsp. garam masala
  • 2 tbsp. butter
  • 1 1/2 eggs half an egg for the mixture and 1 egg for the outer coating
  • 3 medium onions grated
  • 3 slices bread soaked, then drained and crushed
  • 1 tbsp. gram flour
  • pinch of bicarbonate of soda

Instructions
 

  • Dry the mince (in a deep pan on the stove, medium heat) completely with salt, pepper, lemon, chillies, garlic & ginger, turmeric, cumin, coriander and mint. Set aside.
    Heat the butter in a pan, add the onions and stir-fry until translucent. Add the dried mince and let it cook for a few minutes. Adjust salt/pepper/chilli and lastly sprinkle the garam masala.
    Allow to cool, then add the half egg, gram flour, crushed bread, bicarbonate of soda.
    Shape the cutlets into flat ovals and arrange on a greased tray, bake in a medium oven (180 C) for 15 minutes. You can turn them on the tray and bake them for an extra 5 minutes if you want to but it's not necessary to do so. Be VERY GENTLE during turning or removing from tray to avoid breaking the kababs coz they will be soft.
    Remove, allow to cool so that they can harden up a little bit which will make them easier to handle.
    Whip the remaining egg with a tsp. of milk, dip the baked cutlets and shallow fry until nice and golden. Blot and serve as a snack (with chutney or lemon) or as a quick meal with rotis n a salad.

    1. Hi! After baking the cutlets, allow them to cool and freeze. When ready to serve, simply let them thaw out to room temperature, dip them in egg and fry.

  1. Hi…just wondering what I would do if I do not have an oven to bake…do I skip this step in the above recipe and directly fry the cutlets?thanks!

    1. Hi, yes you can do that. Although I would recommend you first lightly fry them without dipping the egg, let them cool then dip in egg and re-fry. This is because the mince is raw and you do not want the cutlets to remain raw as they would brown very quickly after dipping in egg.

    I am curious to know if it’s okay to oven bake the cutlets in the last stage instead of the mentioned shallow frying until golden.

    1. W/Salaam, yes you can dip in the egg and bake, although frying gives moister results.

  6. The mince should be like qeema or it should be minced in a chopper at home. Because the store bought qeema is thicker not like a paste when we do it in a machine at home.

    Thank you very much for your lovely receipes. I have tried some and they came out exactly the same as you said.
    I love your chicken cutlets but I have a small suggestion, with all due respect, if you don’t mind me saying that instead of putting the shaped cutlets in the oven i put them on a layer of thin plastic on a tray in the freezer and once frozen I then continue with your receipe. Like this there will be no fear of breakage. Salaam

    salam,fauzia im a new member n find your recipes really friendly n easy to experiment however on trying chicken cutlets i dont know where i wenr wrong..uptil the drying of mince n sauteing it with onione was concerned it gave out good aroma but when i added gramflour to it the aroma just vanished n the raw smell of gramflour tookover….cant we use bolied potatoes instead or maybe some otheer method…where do you think i went wrong?

      W/Salaam, is the gram flour you are using fresh? If it is stale it gives off a pungent smell. Try to get a new batch or yes you can use mashed potato instead.

      W/Salaam, it means put the mince and any spices in a pan and put it on the stove. Cook until dry.

    Ramadhan mubarak Fauzia, I am gluten intollerant. What do I substitute bread with.

      Ramadhan Kareem! In place of the bread slices, increase the gram flour to about 2 tbsp and mix. Then see if the mixture holds well together, if not then add a little bit more gram flour.
