- Wash the potato strips and drain the water, then blot them dry with a towel. Put them in a bowl, then add all the Seasoning Ingredients. Toss everything together until the chips are well coated with the ingredients. Set aside for 5 minutes. Then give them another toss and fry until almost done. Remove into a strainerSprinkle 1-2 tbsp. of corn flour onto the fried chips, toss them a little and re-fry them in hot oil for a few minutes until crisp and golden. Remove and drain on some kitchen towels. Enjoy your yummy crispy dry masala chips! 🙂
