Crispy Dry Masala Chips
Here is a twist to ordinary chips/fries. This recipe gives excellent crispy fries that are well-coated with a fantastic yummy spicy seasoning. It’s a lovely snack to have, or can be an accompaniment to a meal instead of regular fries for that added extra kick of flavour.
Ingredients for Seasoning
- 4 tbsp sieved gram flour besan/chickpea
- 1/2 tsp salt
- 1 tsp red chili powder or to taste
- 1 tsp red chili flakes
- 1 tsp tandoori masala
- 1/4 tsp cumin powder
- 1/4 tsp turmeric powder
- 1/4 tsp garlic paste
- juice of half a lemon
Extra Ingredients
- 500 gm potatoes peeled and cut into strips
- 2 tbsp corn flour
- oil for deep frying
Wash the potato strips and drain the water, then blot them dry with a towel. Put them in a bowl, then add all the Seasoning Ingredients. Toss everything together until the chips are well coated with the ingredients. Set aside for 5 minutes. Then give them another toss and fry until almost done. Remove into a strainerSprinkle 1-2 tbsp. of corn flour onto the fried chips, toss them a little and re-fry them in hot oil for a few minutes until crisp and golden. Remove and drain on some kitchen towels. Enjoy your yummy crispy dry masala chips! 🙂
