Sauteed Snow Peas

This quick and easy Asian-inspired side dish goes really well with chicken or Asian dishes and can also be served as an appetiser. The same recipe can be used for sugar snap peas too.

Ingredients

  • 250 gm snow peas
  • 1 garlic clove, finely minced
  • 1 tsp grated ginger
  • 1 tbsp oil
  • 1 tbsp butter
  • 2 tbsp soy sauce
  • 1 tsp brown sugar
  • 1 tsp chilli flakes (optional, for heat)
  • 1 tbsp sesame seeds
  • salt and freshly ground black pepper to taste

Instructions

Wash the peas and place them in a pot, add some water. Turn the heat on to high. Bring to a boil then give them 1-2 more minutes of boiling before removing the pot from the heat. Drain the peas and immediately run cold water through them for about a minute, make sure they are all cooled enough to stop cooking.

In the same pan, heat the butter and oil. Sauté the garlic and ginger for a few seconds until fragrant then add in all the rest of the ingredients. Stir until heated through. Add the snow peas back into the pan and sprinkle in a bit of salt and pepper for seasoning. Mix together until well coated. Then turn the heat off, cover the pan and let it stand for a couple of minutes before serving so that the flavours are well infused.
