Red Cowpeas Curry (Whole Chola/Chora/Kunde curry)

Servings : Serves 3-4

If you’re a fan of beans in gravy, these are ideal! Tasty, nutritious and easy to cook. They go well with plain boiled rice or Rotis.

Ingredients

  • 250gm red cow-peas (washed then soaked for at least 6 hours to overnight)
  • 5 fresh tomatoes, blended
  • 1 medium onion, chopped
  • 2 green chillies
  • 1/2 tsp garlic paste
  • 2-3 tbsp tomato paste
  • salt to taste
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/4 tsp turmeric powder
  • 4 tbsp oil
  • 2-3 fenugreek/methi leaves (optional)
  • chopped coriander for garnishing

Instructions

Heat oil in a pan and add the fenugreek leaves (methi) followed by one green chilli, slit. Once they sizzle, add the onions and fry until translucent, then add the garlic paste. Stir fry for a few minutes then add the tomato paste and the turmeric, cumin and coriander powders. Fry for a little while, then add the drained cow-peas and cook them in the tomato paste for a minute or two. Then add the blended tomatoes, remaining green chilli and the salt.

Simmer on medium heat until the tomatoes thicken slightly. Add a bit of water and if you’re using a pressure cooker, close and cook for about 10 minutes. If you’re using an open pan, cook on medium heat until the cow-peas are soft. Garnish with chopped coriander. Serve with rotis!
