Servings : Makes 10-15 bhajias
A quick snack that you can make using leftover plain boiled rice from a previous meal. It works best when the rice is at least a day old. I’ve made these bhajias/fritters many times as a snack and everyone who tastes them can’t believe they’re made out of leftovers!
- 1 cup boiled day-old rice
- 1/2 cup thick fresh yoghurt (or as needed)
- 1 small onion, finely diced
- 3 tbsp chopped coriander
- 1 tsp fenugreek/methi
- 1/4 tsp garlic paste
- 2 green chillies, chopped
- 1/2 tsp salt (or to taste)
- 1/4 tsp cumin powder (optional)
- 2-3 tbsp gram flour/chickpea flour/besan (as needed)
- oil for frying
Put the rice in a bowl and pour the plain yoghurt over it. Use just enough yoghurt to barely cover/submerge the rice. Cover the bowl and let this sit and soak for about 2 hours.
Pour the rice-yoghurt mixture into a processor and blend just a little bit to sort of break down the rice grains. It doesn’t have to be smooth, you want to leave bits and pieces of rice coz this adds to the crunchiness of these bhajias. Turn the mixture back into the bowl.
Then, add the chopped onion, chopped coriander, methi/fenugreek, garlic paste, chopped chilli and salt. You can even add cumin powder if you want. Give it a taste and adjust if needed.
Now add the gram flour a little at a time and stir just until the consistency is such that you can pick a ball and easily form flat bhajias/fritters out of the mixture. Stop adding gram flour once you find you’ve reached that consistency.
While the oil is heating, shape the rice bhajias. Deep or shallow fry them on medium heat. Blot well to get rid of excess oil and serve with ketchup or chili sauce or chutney.

Deep fried. The oil needs to cover the bhajias as you fry them.

Is gram flour same as Ap flour?
No, it is chickpea flour or besan flour.
Wanted to find out incase am unable to get garam flour which flour can I substitute with. Kudos good job!
Hi, its GRAM flour not garam flour…also known as chickpea flour or besan flour or lentil flour. Should be easily available at any supermarket. I would not recommend a substitute for this particular recipe.

W/Salaam, thanks for the lovely feedback and Ameen to your dua. I would not recommend freezing the mixture as the consistency will change and the bhajias might end up scattering in the oil during frying. You can make the batter up to the night before for best results.
