Pizza Bites

There is no wrong way to have a pizza, that’s a fact! Here’s yet another cute way of enjoying your pizza, they are the ideal finger food as each portion is no bigger than a bite or two at the most! I love serving these warm with marinara sauce to dip into (I do not add any pizza sauce in the bites themselves). But they go just as well with any tomato-based dip that you prefer, like ketchup or chilli sauce.

Ingredients for Pizza Dough

  • 2 1/2 cups all purpose flour
  • 1 1/2 tsp salt
  • 5 tbsp oil
  • 1 1/2 tsp sugar
  • 1 1/2 tsp instant yeast (use 2 tsp. for colder climates)
  • 2 pinches baking powder
  • warm milk with a bit of water for kneading

Ingredients for Italian Seasoning

  • 1 tbsp dried oregano
  • 1 tbsp dried parsley
  • 1 tbsp basil
  • 1 tsp garlic powder
  • 1/4 tsp dried thyme
  • 1/4 tsp dried rosemary
  • 1/4 tsp red chilli flakes
  • 1/4 tsp black pepper powder

Other Ingredients

  • filling of choice (recipe link given below)
  • 1 cup mozzarella and cheddar cheese (or as needed)
  • marinara dipping sauce (recipe link given below)
  • Italian seasoning

Instructions

First, prepare the Italian Seasoning by crushing all the ingredients in a spice grinder or using a mortar and pestle. Store in an airtight container and use for sprinkling over pastas, pizzas or garlic bread. This seasoning is optional but I find it really elevates the flavour of these pizza bites. You could simply leave it out if you like.

You can basically use whichever filling that you like, just make sure it is a dry-ish filling so that the pizza bites do not end up too soggy.

Once your filling is prepared and has COMPLETELY cooled down, add the shredded cheese into it and mix it up. Set aside. Grease a 9×11 baking dish or any dish that is oven-proof.

Mix all the dry ingredients and the oil, then slowly start adding the warm milk a little at a time. Get it to a soft dough, the softer the better, knead it very well for at least 8 minutes or more if possible.

Dab a touch of oil all over the dough, then cover it and place it somewhere warm. Leave it to rise to double its size, takes about 30 minutes to an hour depending on the weather.

Once ready, punch down the dough and then divide it into about 28 small equal balls.

Stretch out each ball of dough with your fingers and add about a teaspoon of the filling plus cheese mixture, then gently pinch the ends together to seal the ball securely. Remember, these are supposed to be BITE sized, so do not over-fill and do not make them too big. Place the filled dough seam side down on your greased tray. Keep going until all are done.

Cover with a light cloth and allow the pizza bites to rest and rise for 20 minutes, then preheat the oven at 180 C.

In the meantime, brush the pizza bites with egg wash then sprinkle a few pinches of italian seasoning over them.

Bake them for about 20-25 minutes or until the pizza bites look golden. Serve warm with marinara sauce or ketchup or any dip that you like.
