Here is a twist to ordinary chips/fries. This recipe gives excellent crispy fries that are well-coated with a fantastic yummy spicy seasoning. It’s a lovely snack to have, or can be an accompaniment to a meal instead of regular fries for that added extra kick of flavour.
Ingredients for Seasoning
- 4 tbsp sieved gram flour (besan/chickpea)
- 1/2 tsp salt
- 1 tsp red chili powder or to taste
- 1 tsp red chili flakes
- 1 tsp tandoori masala
- 1/4 tsp cumin powder
- 1/4 tsp turmeric powder
- 1/4 tsp garlic paste
- juice of half a lemon
- 500 gm potatoes, peeled and cut into strips
- 2 tbsp corn flour
- oil for deep frying
Wash the potato strips and drain the water, then blot them dry with a towel. Put them in a bowl, then add all the Seasoning Ingredients. Toss everything together until the chips are well coated with the ingredients. Set aside for 5 minutes. Then give them another toss and fry until almost done. Remove into a strainer
Sprinkle 1-2 tbsp. of corn flour onto the fried chips, toss them a little and re-fry them in hot oil for a few minutes until crisp and golden. Remove and drain on some kitchen towels. Enjoy your yummy crispy dry masala chips! 🙂

Yes that would be ok, although you may lose out a bit on the crispiness. The cornflour/cornstarch helps dry up any excess moisture from the potato strips making them crunchy/crispy.
can these fries b stored for a longer time..???
Storing them will reduce their crispiness.

A quick question, is it ok if I fry the chips once and store them for the next day and re-fry them with the cornflour before serving?

what is tandoori masala? can I avoid it? can it be made at home?
A type of spice, normally easily available and sold in most supermarkets but you can leave it out.

Can I use chappati flour instead of corn flour?
W/Salaam, I guess you can but the results will not be the same. You see corn flour sort of absorbs moisture from the fries thereby making them extra crispy. Chappati flour will not give the very same results. But you CAN use it if you do not have cornflour. 🙂
