Tasty snack made of chicken morsels dipped in a gram flour batter and fried until crispy on the outside yet soft and moist on the inside. Served with tamarind sauce and chilli tomato sauce. Perfect little snack, a change from your regular chicken nuggets. 🙂
Ingredients
- 500gm boneless chicken (cut into cubes and marinate in the following ingredients for at least 2 hours)
- 1/2 tsp garlic paste
- 1/2 tsp ginger paste
- 1 tbsp green chili & coriander leaves paste
- 1/2 tsp salt
- 1 tsp red chili powder
- 1/2 tsp black pepper powder
- pinch of tandoori masala (optional)
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/4 tsp turmeric powder
- juice of half a lemon
Ingredients for Batter
- 1 cup gram flour/besan flour/chickpea flour
- 1 tbsp corn flour or rice flour
- 1/2 tsp salt
- 1 tsp cumin seeds
- 1 tsp red chili flakes or chili powder
- 1/4 tsp garlic paste
- as needed water
- 1/4 tsp ENO salt or baking soda
Instructions
Mix the dry batter ingredients and gradually add water whilst mixing to form a medium thick batter. Mix this batter vigorously then allow it to rest for 10 minutes.
Just before frying, add a quarter tsp. of baking soda or ENO salt to the batter, mix well, then dip the chicken pieces into the batter and deep fry in oil on medium heat until golden and crispy.
Remove and drain on kitchen towels, then serve with chutneys/dips of your choice.
can you use baking powder instead of baking soda
No, the two work differently, best to stick to the recipe for good results.
I made thes but the batter came off during frying. Why is this. Is it because I used baking powder.
Why did you add baking powder? It is not in my recipe. Please follow the recipe exactly for accurate results.
Because I didn’t have baking soda. But ill buy some insha allah before ramadhan.
Baking powder is totally different from baking soda, the two react differently. You will have better results with baking soda.

Can you freeze the marinated
Can you freeze the marinated chicken pieces and use as required with the batter before frying? Or can you freeze fried pakoras?
Yes you can freeze marinated
Yes you can freeze marinated batter. You can also fry and freeze the pakoras, then just thaw them and warm them up in an oven or toaster-oven to freshen them back up.

When there is a slash mark / it means OR. Gram flour is the same as besan flour which is the same as chickpea flour. Those are all names of the same thing. Wrote them all so people who don’t recognise one name will the other.
