Layered Rice

It’s always great to mix things up. Could a rice dish be any more appealing than one that is this colourful and satisfying?

First comes a base of rice that has been cooked with peas, sweet corn and carrots. Then follows a layer of saucy spicy minced beef, followed by a layer of potato slices. This is then topped off with a decadent layer of creamy white sauce. Finally, to top everything off is a scattering of cheese. The whole dish thing is then baked in the oven until the cheese is melted and golden. Voila! A perfectly delicious everything-in-the-bowl meal!

Ingredients

  • Mince Sauce - link provided in instructions below
  • 1 1/2 cups rice
  • 1 1/2 cups mixed half-boiled veggies (I used peas, sweet corn and chopped carrots with capsicum)
  • 2-3 medium potatoes, peeled, sliced and fried
  • salt to taste
  • 2 tbsp. oil
  • butter for greasing the baking dish
  • 1 cup shredded mozzarella and cheddar cheese (you can use more for an extra cheesy result)
  • chilli flakes (optional)
  • chopped coriander (optional

Ingredients for White Sauce

  • 2 tbsp. butter
  • 2 tbsp. plain flour
  • 250ml milk
  • salt & pepper to taste

Instructions

First prepare mince sauce using this recipe: Mince Sauce  (omit the capsicum and potatoes and keep the gravy thick)

Grease a 9″x11″ baking dish with butter.

Wash and soak the rice for 20-30 mins.  Then boil the rice in a large pot of salted water which contains 2 tbsp. of oil until the rice grains are about 90% done. Add the mixed veggies, stir them in and then drain the water.  Pour this colourful rice into the greased baking dish.

Add the mince sauce to cover the rice.

Next, layer the fried potatoes on top of the mince sauce.

Now you can make the white sauce.

Melt the butter in a pan, then sieve in the flour.  Add salt and pepper and stir until smooth. You need to cook this for 2-3 mins to get rid of the raw taste/smell from the flour.  Remove the pan from the heat and start adding the milk a little at a time while stirring or whisking continuously to form a smooth roux/sauce.  Keep adding the milk until it’s all in and the mixture is smooth.  Return the pan on the heat and cook on medium heat until the sauce thickens slightly.  Adjust taste to your preference.  Pour this sauce over the fried potatoes in the baking dish.

Lastly, sprink the grated cheese.  I like to add some chilli flakes and chopped coriander on top too.

Bake in a preheated oven at 180C until the cheese is golden and bubbly. This should take about 15mins, if the cheese turns color too quickly, cover your bowl with a piece of aluminum foil and keep baking for a few more minutes.
