Tzatziki Sauce

Servings : Makes approx. 2 cups

Tzatziki is a Greek sauce served with grilled meats or as a dip. It goes really well with my Chicken Gyro recipe coming soon.

Ingredients

  • 2 cups thick plain greek yoghurt (if you are using regular yoghurt, make sure to strain it to remove excess water)
  • 1 tbsp. lemon juice
  • 1 garlic clove, minced
  • 1 small cucumber
  • salt and pepper to taste
  • some chopped dill or mint, as per your preference

Instructions

Peel and cut the cucumber in half length-wise. Scoop out and discard the centre with all the seeds. Then grate the cucumber and squeeze out all the water from it.

Whisk the yoghurt with a fork, add the grated cucumber and all the other ingredients. Mix, then taste and adjust seasonings to your liking. Refrigerate for at least 30 minutes in order for the flavours to develop.

Serve as an accompaniment to wraps or BBQ meats.
