A delicious and easy pickle that doesn’t need to be cooked!
- 1 semi-ripe mango
- 2 carrots
- 1 tsp salt
- 1 tsp red chilli powder
- 1 tbsp sugar
- pinch of turmeric powder
- 1-2 red or green chilli, chopped
- chopped coriander
Grate both ingredients together and mix. Add the salt, chilli powder, sugar and turmeric powder.
Sprinkle some red chilli flakes if you want it extra spicy, and add some chopped green chillies and chopped coriander. Let it sit for about half an hour and serve!!
Depending on the sourness of the mango and the sweetness of the carrots. You can adjust the sugar/salt according to your taste. 🙂
