A speedy pickle that is both sweet and sour, made from mangoes and spiced up with salt, sugar and a few other spices. Goes beautifully with rice dishes.
Ingredients
- 2 grated raw mango
- salt to taste
- 1/4 tsp turmeric powder
- 1 1/2 cups sugar
- 1 tbsp chilli powder (more for hotter)
- 1 tsp cumin powder
Instructions
In a bowl add grated mangoes; salt and turmeric powder and set it aside for about 2 hours. Add the sugar little by little to the mango mixture and stir continuously using a wooden spoon till all the sugar is nearly dissolved.
Heat a pan, add the mango and sugar mixture and go on stirring over a very slow flame until the sugar has dissolved completely. Continue stirring until one string consistency of the sugar syrup is reached. Once cooled, add the chilli powder and cumin powder. Store in glass lid container.
