Spicy Mexican Pizza

Servings : Serves 3-4

A super spicy, delicious pizza with Mexican flavours. This pizza is easy to prepare and tastes out of this world!!

Ingredients for Mexican Chilli Sauce

  • 250 gm lean beef mince
  • 2 tbsp oil
  • 1 medium capsicum/bell pepper, cut into cubes
  • 1 medium onion, finely chopped
  • 1 tsp garlic paste
  • 1/2 tsp ginger paste
  • 1 tbsp tomato paste
  • 2 ripe juicy red tomatoes, finely diced
  • 1 tsp paprika powder
  • 1/2 tsp black pepper powder
  • 1 tsp cumin powder
  • 1 tsp red chilli powder
  • 1 tsp salt
  • 1 tsp sugar
  • 1/2 tsp oregano
  • 1 cup boiled/canned black beans or red kidney beans (if using from a can, drain and rinse them before using)
  • 1/2 cup hot water (or as needed)

Ingredients for Pizza Base

  • 2 1/2 cups all-purpose/plain flour
  • 1 1/2 tsp salt
  • 5 tbsp oil
  • 1 1/2 tsp sugar
  • 1 1/2 tsp instant yeast (use 2 tsp. for colder climates)
  • 2 pinches baking powder
  • warm milk mixed with a bit of water for kneading

Ingredients for Topping

  • 1 cup mozzarella cheese
  • 1/2 cup cheddar cheese
  • 1 small onion, sliced
  • 1 small bell pepper/capsicum, cubed
  • 1 fresh red chilli, chopped

Instructions

First, prepare the sauce.

Heat the oil. Add the onions and fry until soft (but not golden). Add the garlic and ginger. Turn the heat up and add the mince. Sprinkle paprika, cumin and black pepper powder. Fry the mince on high heat until brown and dry, making sure to break up any lumps with your spoon. Then add the capsicum cubes and green chilies. Cook them for a minute. Next add the chopped tomatoes, tomato paste and chili powder. Fry for a couple of minutes. Then add the hot water, salt, sugar and oregano. Turn the heat down to low, give it a stir and let the sauce simmer gently for about 20 minutes, giving it an occasional stir. Finally, add the beans. Stir and adjust salt/spices. Simmer again for a few minutes then turn off the heat. The sauce should be of a thick spreadable consistency, not too watery.

Then prepare the dough.

Mix all the dry ingredients and the oil, then slowly start adding the warm milk a little at a time. Get it to a soft dough, the softer the better, knead it very well for at least 8 minutes or more if possible. Dab a touch of oil all over the dough, then cover it and place it somewhere warm. Leave it to rise to double its size, takes about 30 minutes to an hour depending on the weather.

Once risen, punch it down, give it a quick knead and then roll it out to about 12 inches diameter and place on your greased pizza pan/tray. Again cover the tray with a light cloth/towel and let the base rest/rise slightly for about 15-20 minutes.

Preheat the oven at 180 C.

Make small slits on the surface of the pizza base, then spread as much of the mince sauce as you like (any leftover sauce can be frozen for the next pizza or enjoyed with rice or pasta). Scatter the grated mozzarella and cheddar cheese on top, followed by the sliced onion, cubed capsicum and chopped red chilli. Bake for about 20-25 minutes. Give it a couple of minutes before slicing and serving.
