Quesadilla

Whenever I make a batch of tortillas I absolutely HAVE to set some aside for making yummy cheesy quesadilla.  Basically a quesadilla is more or less the Mexican equivalent of a grilled cheese sandwich. It is made using 2 tortillas with a cheesy filling in between, warmed on a pan until the tortillas are slightly golden and crunchy, and the cheese in the middle is melted and gooey enough to hold everything together.  It is then cut into wedges and served with guacamole, salsa, sour cream or any dip of your choice.  You can simply have a cheese filling in them but I like to add a variety of extra fillings in there sometimes.

These have leftover fajita chicken with cooked capsicum, onion and melty cheese in them

Ingredients

  • 4 tortillas
  • 1-2 cups shredded cheddar cheese or any melty cheese that you like
  • chicken fajita, choped up - recipe link in instructions below
  • sauteed pepper and onion - recipe link in instructions below

Prepare the chicken, onions and pepper as per this Chicken Fajitas recipe then chop everything up into small bit sized pieces.

Heat a large frying pan over medium heat until hot.  Place a cooked tortilla in the pan and sprinkle with half of the chicken,  half of the sauteed pepper and onion mixture and half of the cheese mixture.  Top with a second tortilla and press it down gently with the palm of your hand.

Cook until the underside of the bottom tortilla is golden brown in several spots and half of the cheese is melted, about 3 minutes.  Using a spatula, carefully flip the quesadilla over and cook until the underside of the second tortilla is crisp and golden brown in several spots and all of the cheese is melted, about 2 to 3 minutes more.

Slide the quesadilla from the pan onto a cutting board and cut into wedges.  Repeat with the remaining ingredients to make a second quesadilla.  Serve with a dip of your choice.
