Gnocchi Pasta with Chunky Beef & Baby Peppers Sauce

A flavourful and meaty, saucy pasta dish that will tingle your tastebuds!

Ingredients

  • 125 gm beef mince
  • 300-400 gm gnocchi pasta (or any pasta of your choice)
  • 1 carrot crushed in a food processor to very fine pieces
  • 2 fresh tomatoes, crushed
  • 1 tbsp tomato paste/puree
  • 4-6 baby peppers, left whole
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 4-5 tbsp plain yoghurt - whipped
  • 2 tbsp oil
  • 4 tbsp fresh coriander, chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • salt and pepper to taste
  • some lemon juice
  • 1 green chilli, chopped
  • 1 onion, chopped very finely

Instructions

Put the mince in a bowl, then add the ginger/garlic and some spices of your choice, salt and pepper. Shape into 2 burger patties place on some cling film/plastic wrap and freeze until almost solid

Heat some oil, then add the onions and fry until translucent.

Add the carrots and fry for a few minutes, then remove the patties from the freezer and break off chunks and throw them into the pan. Do not move them around right away; let them fry for a few minutes on a low heat, then sprinkle salt/pepper, chopped chilli and any other spices of your choice and stir to turn them over. Let them cook for a little while and then add the crushed tomatoes and the tomato paste. Let this cook until the oil starts to separate from the mixture, add the yoghurt and cook for 5 minutes.

Then add your washed baby peppers and let the sauce simmer for a while to develop all the flavors. You can add some water if it starts to dry up. Let this cook for a little while, then add the lemon juice and turn off the heat.

Separately, boil your gnocchi pasta (or any pasta of your choice) as directed on the packet. Then mix the sauce with the pasta and garnish with coriander. Serve hot!!
