Bihari Kabab

Bihari Kabab, sometimes known as Bihari Boti is made up of strips of tender cuts of beef fillet that are marinated and then threaded onto skewers and grilled until done to almost a ‘falling apart’ texture. They are the most perfectly succulent bits of BBQ beef and closely resemble our East African mishkaki or nyama choma.

Ingredients

  • 500 gm beef fillet (tender-cut), cut into 1 inch strips or cubes
  • 1/2 tbsp. ginger paste
  • 1/2 tbsp. garlic paste
  • 1 tbsp. grated raw papaya
  • 1/2 cup thick yoghurt
  • 1 large onion
  • 1 tsp. salt
  • 1 tsp. chilli powder
  • 1/4 tsp. black pepper powder
  • 2 tbsp. oil
  • 1 tsp. cumin powder
  • 1/2 tsp. coriander powder
  • juice of 1 lemon (2 tbsp.)
  • 1/4 tsp. garam masala
  • 1/4 tsp. turmeric powder

Instructions

Cut the onion in half, grate one half and finely slice the other half. Fry the sliced onions until golden brown and then remove and crush completely.

Now add both the fried/crushed onions and the grated onions plus ALL the other ingredients except the beef into a bowl and mix well. Then add the beef strips or cubes and mix to combine. Cover and refrigerate overnight to marinate.

When ready to grill, thread the fillet strips on the skewers. Either grill over a charcoal BBQ until cooked through and tender or under a hot oven grill. Make sure to turn the skewers often to get the meat done on all sides. Brush them with some oil occasionally during grilling. It should take about 8-10 minutes per side for them to be done.

Serve with salad, fries and parathas/chapatis or naans. Leftovers are excellent for making chapati wraps or stuffed/rolled in pita bread with salad and mayo or ketchup for a quick and easy sandwich.
