Steamed Chicken

This is a healthier method of preparing chicken whilst still delivering loads of awesome flavour. By incorporating aromatic and flavourful spices, even simple steamed chicken can be something spectacular.

Ingredients

  • 4 skinless chicken quarters
  • 4 tbsp thick plain yoghurt
  • 4 tbsp fresh coriander
  • 1 tbsp lemon juice
  • 2 tsp garlic paste
  • 2 tsp ginger paste
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1/2 tsp cumin powder
  • 3/4 tsp salt
  • 1/2 tsp red chilli powder
  • 1 green or red fresh chilli
  • 1 tbsp oil or butter

Instructions

Clean the chicken quarters and make a few shallow slits on each piece. Pat dry and set aside.

In a blender, mix the yoghurt, fresh coriander, lemon, ginger, garlic, fresh chilli, chilli powder, turmeric, garam masala, cumin powder and salt. Blitz to combine. Apply this on the chicken pieces. Cover and refrigerate for at least 2 hours or up to overnight.

Remove the chicken from the fridge half an hour before beginning to cook. Put a wire mesh or steamer in a pan over simmering water. Place the chicken pieces on the steamer and cover the pan. Allow to steam for about 25-30 minutes over medium heat. Remove, cover and let the chicken cool down for about 10-15 minutes. You can smoke the chicken at this point if you want it to have a nice smoky aroma.

Heat the 1 tbsp of oil or butter in a pan and then lightly fry the chicken just to give it a good colour. This step is optional.

Serve with accompaniments of your choice. You can even shred the chicken and use it in salads, wraps, with rice and so on.
